I kept the ingredients as is but I didnt use any orange juice and reduced the amount of water to 3/4 cup. I baked uncovered at 400 degrees for 2 hrs basting every half hour. Big hit with the family.

It was my first time making yams from scratch and they were a hit!! I just added the marshmallows for old time sake.. Loved the pineapple in it..
ONCE THE YAMS SOFTENED AND I WAS LEFT WITH LOTS OF LIQUID I POURED THE LIQUID IN A SAUCE PAN AND REDUCED IT A BIT.. THEN I POURED IT BACK ON THE YAM.. CARAMELIZED VERY WELL AND HAD A TANGY SWEETNESS MY GUESTS ABSOLUTELY LOVED! TOTALLY MAKING THIS AGAIN!

these were the worst. i have to agree with the sentiment that this recipe deserves a negative star rating. there is WAY too much liquid, the flavor is..."off" im not sure what it is but its not quite right. i added some nutmeg and that made it a litte better. i ended up having to drain the liquid off and put it in a pan to reduce it with some butter, honey, and brown sugar. after it thickened up i put it back over the yams n baked another 30 mins or so. better but still not what it should have been. they never candied at all and werent nearly sweet enough. im a good cook and this was just a total failure. get another recipe, or seriously, make something up cause this one is just NOT worth the time or groceries.

I had never made candied yams before. I thought this recipe was very flavorful, tasty and easy. Yes the yams were very sweet and my family loved it. I plan to make this recipe again next Thanksgiving.

Candied yams are supposed to be a little sweet. This was only tart and I have too much left over because no on liked it. Don't waste your time. Try another recipe.

Never candied and didn't even taste good. I couldn't serve them as they were. Ended up draining them, mashing the potatoes and adding egg, sugar and vanilla to make sweet potatoe souffle.

I agree with the other reviewer that if I could rate this in the negative it deserves it. The recipe called for way too much liquid - I'm not sure how it would be expected to reduce that much in that little baking time! Even keeping it in the oven for a little longer didn't work. It never 'candied', and was essentially like boiling the yams in juice in the oven. Quite embarrassing, as I wanted to try something different for a luncheon we're having at work and there's no way I'm taking this in to serve my co-workers. Now I have to think about what I can pick up in the morning on my way to work to make up for the dish that I had committed to bringing.

...I would. This was miserable... I usually make up my own recipe for candied yams but I wanted to try someone else's version. I followed the recipe to the letter but the 3 cups of liquid to the potatoes was a huge over-kill. It didn't reduce at all, never got thickened. The potatoes were basically boiling in it in the oven. All-in-all, it was just nasty. I'll be using my own recipe from now on.
