Directions

Using a skewer, put 1/2 tomato, cut side up, followed by a piece of mozzarella, basil, second piece of mozzarella and finish with another tomato half. Season skewers with salt, pepper, oil and vinegar.

This is a great recipe - but for us, we made a few alterations. Instead of using buffalo mozzarella, we used small fresh mozzarella balls. We have used these as appetizers and as a dinner side. Either way, they were quite tasty. Our grandchildren even liked them!
