We loved it I baked it in a large square pan and instead of using the icing with all that sugar and fat I opted to just melt the white chocolate and drizzled it over the cake the I added the almonds it was a hit. I have been asked to bring it for thanks giving dinner!

The best carrot cake!!! I use 4 cups of sugar on the frosting.. The cake was very moist I love it i can't wait to make it again :

My friend's husband loves carrot cake and my daughter wanted to bake it at home, we followed the recipe and everybody enjoyed it. Personally to me cardamom was lost and little bit of a pound cake kind of look. I would make it again by adding more cardamom and brushing cake with pineapple juice or carrot syrup.

This is the best carrot cake recipe EVER!! I always get compliments when I make this cake and my parents always request I make this for any special occasion. I've tried several different recipes and there is none like this one. The cardamom gives it an extra special taste as does the white chocolate into the cream cheese. One change I made was less sugar on the frosting, 6 cups is A LOT but if you like sweet, pour it on!! Once you taste this cake you will never go back to store bought carrot cake!

Amazing cake! I couldn't resist adding some coconut and raisins, which just added to the sweet, moist decadence. It will definitely make an appearance (and quick disappearance this holiday! Worth every step.

This is the best carrot cake I've ever eaten. Everyone who has tried it agrees. It is totally moist and the icing is unbelievably perfect. A MUST TRY! And you really cannot mess it up as long as the measurements are correct and make sure your butter/cream cheese is at room temp when making the icing.
