Caribbean Chicken

  • 1 teaspoon allspice
  • 1/4 cup red onion, chopped
  • 1/2 cup green onions, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup orange juice, fresh
  • 1 tablespoon lime zest
  • 2 tablespoons soy sauce
  • 2 tablespoons freshly chopped thyme leaves
  • 2 tablespoons jalapeno, seeded, diced
  • 2 teaspoons freshly grated or chopped ginger
  • 1 clove garlic
  • Salt and pepper
  • 4 chicken breasts, bone and skin on
  • Lime wedges

Puree all ingredients except chicken in food processor. Add marinade and chicken to re-sealable plastic bag, mix thoroughly and let marinate, refrigerated, for 4 to 8 hours.

Preheat oven to 350 degrees F.

Heat grill to high, remove excess marinade from chicken and place on grill. Grill each side of chicken for 3 to 4 minutes then place on a pan and finish in the oven for 15 minutes.

Squeeze a lime wedge over each piece of chicken and serve.

    I followed the recipe to the T, marinaded the chicken for 6 hours, cooked it according to recipe. The chicken had no flavor at all. It would of tasted better with some simple jerk seasoning. Will not make again.
    Everyone loved it. Was very easy to make and was very delicious. I did use more jalapeno though and lime juice. I also cut up some onions and bell peppers and put under the chicken and just baked it all together! I will definitely cook this many more times.
    My husband was groaning over the chicken. I was impressed. I marinated 19 hours. I could only find chicken thighs instead. Cost about $5.00 for three adult portions. I didn't bother taking the lime skin, I used the juice instead. I oven baked 375 for 50 minutes. It was very good and healthy. Must try.
    My loved this recipe it was a hit at my memorial day cookout.
    Really good, grilled up beautifully. Could use more jalapeno and allspice. Also added juice from the zested lime to the marinade.
    Marinade smelled fantastic after I blended it in the food processor, but it didn't stick to the chicken at all during the grilling process. It marinated for about 6 hours, but it didn't have much flavor after it was grilled. Not a fan.
    This was a good recipe. Not's been Americanized, but still good. The chicken had a great look and texture. Also, it took longer to cook in the oven.
    I think marinating is probably the key. I didn't have much time so it only marinated for a couple of hours. The skin was really tasty but the chicken itself was not as flavorful. Will definitely make again with more time.
    Freakin' aweome recipe. Chicken took much longer to cook in oven. I had read the reviews prior to making chicken so I did expect that. I left the skin on even though I have never done that. It gave it a moist flavorful texture. Also, per recipe, I grilled it on grill pan prior to oven and it gave it a great taste! This was family hit.

    Let it marinate for 24 hours due to crazy rain in June on the Nor Cal coast. Then cooked it entirely on the grill. it was so delicious and made the fog fade away and the rythem of carribean drums seem that much closer.
    This recipe wasn't bad, it just didn't taste "Caribbean". The flavors reminded me more of Asian food. I plan on trying some jerk chicken recipes for a more Caribbean taste.
    I just made this recipe and I couldn't wait to rate it. I just followed the recipe, made it the night before, grilled for about 3-5 minutes on both sides then baked it for 15 minutes. It tastes really good, and very tender and moist. Love it. Thanks Guy! Will definitely make this on my summer BBQ party :)
    Thought this was great! I love making chickend dishes like this.. I make this really great chicken with a dijon marsala sauce that I found in this hilarious cookbook.. it's a bit politically incorrect, so I can't tell you the name of it here cause some of you will freak out about it, but if you google "whipped and beaten culinary works" you can find it. but don't go unless you can take a good joke!
    When I made this I marinated the chicken for over 24 hours. This was perfect since I don't eat the skin and the flavor went into the meat, not just the skin. Also, I baked it in the oven for more than 15 minutes. It would have not been done, otherwise. Will definitely make this again.

    Funny, I ran out of time to cook it the night I planned to, so it ended up marinating for 24 hours. Then the next night I only had time to grill it (obviously I have teenagers!) and put it in the refrigerator to eat the NEXT night. On the third night I just finished it in the Oven for 15 minutes at 350. It still seemed fresh off the grill and was moist and delicious. I served it with the Coconut Rice (and broccoli) and everyone loved the entire meal, even the picky eaters!
    Made this for my family and it was a hit. I was nervous that i did not have but one hour to let it marinate, but it still came out tasty. I also used the outside grill and the flavors were just there. Next time I will also cook caribbean rice to go with it. I will definately make this recipe again.
    I made the marinate in the morning and then cooked it in the afternoon. The marinate smelled DELICIOUS!!! so I was very exited. unfortunately when the chicken was cooked it was kind of taste-less... it also wasn't the most appetizing looking thing either... other then that it was ok. not sure if I will be making this again, but I have no regrets for trying it!!!
    I found the marinade too watery and zero flavor, I was pretty excited in making this recipe but was totally disappointed and uninterested in even eating it. will not be making it again
    I cooked this for a group of friends and not only was it very authentic but it was easy to make and needless to say a big hit! I will be making it again really soon. I recommend putting it on the grill even after you bake it for just a couple of minutes for added favor.
    This chicken dish is fantastic! My husband is not a huge chicken fan until a cook it like this. My children love it too. This is now a common dinner in our home.
    Made this for dinner tonight and my whole family loved it. I would reccomend it to anyone. Served over coconut rice it adds just enough sweetness with the spiciness and saltiness :) DELICIOUS!!!!

    This chicken had such good flavor and so juicy. Kids loved it. Tomorrow I will use the leftover chicken in a salad. Can't wait to make the rice. A+

    I used this marinade with boneless, skinless chicken breasts. I added an extra clove of garlic and one tsp of kosher salt and one tsp of black ground pepper. My husband then cooked the chicken completely on the grill. The results was amazing! The chicken was moist, had a wonderful flavor and the outside had a slight crust. Even my four year old said the spices were perfect. I will repeat this recipe for an upcoming dinner party. My family said it was the best meal in we have had in a while!
    I've always been wary of trying recipies with chilies and peppers in them- but being a bit bold and wanting to follow the recipe exactly I went for it. Do not fear the jalapenos- they did not add too much spice to the marinade. To me, it was a marinade that was very palatable and not too tangy, not too bold, not to over the top in any way, shape or form, and would probably please a lot of people. Since it's still fairly cold in MN, we used our George Foreman grill. My boyfriend commented that it still tasted as if it came from a traditional grill. We will definitely make this again.
    Alot of times Guy's menus are too all the place for me, but this marinade looked so amazing - I just had to try it. The chicken was so tender and tasty - my guests couldn't get enough. I made coconut rice and smashed black beans w/ jalepeno to go with the chicken.
    This chicken dish is absolutely awesome! Very flavorful but not overpowering. It is definitely a keeper :D
    I made this for my husband and he absolutely adored it. I added some maple syrup for added sweetness and for color because after blending the sauce was very green; however as it cooks the sauce caramelizes nicely.
