    Fabulous and easy. I replace the oil with apple sauce (equal portions, reduce the sugar by at least half, bake for an additional 5-10 minutes and it turns out perfectly. Definitely use Cathy's cream cheese frosting on top!!!!

    If you are looking for a quick and easy carrot cake with loads of carrot and nut flavor that isn't a brick, you have found a winning recipe. Based on other reviews my 9 year old and I chose this recipe and she was able to follow the directions and bake the cake herself with great success. We like the idea of pistachios instead of walnuts which turned out to be both eye pleasing and delicious. We also took the suggestion of an orange glaze which complimented the cake beautifully. [about 1 1/2 cups powdered sugar and 3 tablespoons OJ] Since we are vegan we used egg replacer and the cake still rose well. It was not a tall cake though. This recipe is a keeper.

    This was the easiest carrot cake recipe I could find and made it for the first time for tomorrow's Christmas dessert. I used brown sugar and substituted 3./4 cup of flour with locally grown spelt flour which may explain the 60 minutes bake time before it was completely done. I made Cathy's cream cheese frosting using 1/2 the recommended sugar and will definitely make this cake again.

    Thank you for sharing the recipe! It is the best carrot cake I ever made.

    I used 9in round cake pan instead of the square one.

    I followed the recepe verbadum and found that it tasted more like ginger bread rather than carrot cake, but none the less it was ok, just not good for the flavor i was looking for.

    I made this cake/bread is just melted in my mouth...YUMMMMMM
    because the recipe called for orange juice I decided to make the frosting from powdered sugar and orange juice... if you have diabeties dont make this frosting...WOW...

    THANK YOU for the wonder cake recipe.

    I make this cake all the time, its amazing! today i didnt have walnuts, so i used pistachios instead....the result.....incredible! i also added a little honey on to before baking....love it!

    I really enjoyed making this cake. It was my very first time baking a cake and serving it to family members during thanksgiving.... and it was a big hit !!! Very easy recipe to follow and a great cake to serve to family and friends.
