This is my favorite chicken pot pie! I'm lucky to live in Austin and sample it frequently. It's easy to make, but it's more fun to have the "Queens" deliver it right to my door. The flavors are very subtle and the base creamy, so this pie delivers a high dose of comfort food pleasure with a bit of a sophisticated twist. The wine, shallots and peppers create just the right touch. Keep cooking, Queens! You ROCK!

The Casserole Queen's Chicken Pot Pie is our new favorite - and my husband never liked pot pies before! We agreed it needed more seasoning so on our second attempt I added more salt and pepper and also some rosemary to really boost the flavor. Fantastic! Instead of puff pastry I used regular frozen pie shells as the topping and it came out great. My husband ate nearly half the pan in one sitting! I didn't worry too much about the amount of chicken I put in - I just roasted a whole chicken seasoned inside with whole garlic cloves and tarragon, rosemary and freshly ground black pepper. This recipe makes for great leftovers, too. The ladies did a wonderful job on the show. Thanks, Bobby, for bringing them to our attention.

I did not think this recipe was worth the effort. I was looking forward to trying the puff pastry for a crust, but found that I prefer a traditional pie crust. Also, I thought the filling was a little on the bland side--and I followed the recipe to the letter. I noticed a disclaimer that the recipe had not been tested by the food network kitchen--that should have been a clue.
I did love the Casserole Queens and look forward to seeing more of them.

I love these girls from Texas! What great energy and personality - it made me want to grab my 50's apron and be part of the party! The Casserole Queen's chicken pot pie looked fantastic and I was so disappointed that it didn't win the thrown down. I wish I lived in Austin so I could have home delivery of this comfort food every week! I can't wait to try this recipe at my house - I just wish I could turn on the FoodNetwork and see more of Crystal Cook and Sandy. I WANT MORE!!!!

The best chicken pot pie I have ever had! The one thing I never cared for in chicken pot pie is the dough. It's very heavy and in most cases takes away from the filling. The puff pastry crust is perfect. It's lite and crispy and really goes well with the filling. This is with out a doubt a keeper and I am sure I will be making this many more times. Hats off to the "Casserole Queens". Does anyone have their french toast casserole recipe? I hear it's another to die for recipe!

The puff pastry part looked sooo good but I had to make do with gluten free pie crust. We also had to cut out most of the milk and cream and substituted a richly flavored chicken broth (made with Better than Broth Chicken concentrate as someone else mentioned. It was still very good. The shallots and peppers were a nice touch. I didn't add more salt because my broth was pretty salty to begin with. I agree with the other posters that you would need to add salt if you made the recipe as written. Also, I prepared the filling in an oven safe cast iron skillet...as I was getting ready to transfer the filling to the casserole dish my son suggested we just cook it in the skillet (clever boy. So I put the pie dough over the skillet and cooked it that way. Made for a very nice presentation (and one less dish to wash.

To the people asking about the potatoes - it says on the recipe where the ingredients are all listed to boil them. I boiled mine to just tender so they wouldn't end up mushy after being baked. I also doubled the salt. Unfortunately I didn't have any dry wine but it was still very good! It's easy to make but not that quick unless you get a chicken already roasted from the store.
