Ingredients
  • 16 medium diver scallops, cleaned
  • 1/8 cup extra-virgin olive oil, plus more for searing
  • 2 teaspoons minced garlic
  • 1 tablespoon finely chopped thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups field greens
Directions

In a medium bowl, marinate the scallops with olive oil, garlic, thyme, salt, and pepper. Let them marinate for 20 minutes.

Heat enough olive oil to lightly coat the bottom of a medium saute pan over medium-high heat. Add the scallops. Cook quickly in each side until golden brown, about 1 to 2 minutes per side. Remove from the heat and place 4 scallops around a mound of greens. Repeat.

Awesome - have done t his 5 or 6 times now. Very easy and delicious every time. Only one warning - the scallop mixture carmelizes and gets sticky. Be prepared to have a teflon spatula to scrape the great stuff from the bottom of the pan. It's the best part :) item not reviewed by moderator and published
I had EVERY ingredient at my house already besides the scallops! These were AMAZING!! Followed recipe exactly! item not reviewed by moderator and published

Sea scallops are not prepared often, due to the price, but when they were on sale, I jumped at the chance. This recipe is perfect, to truly experience the magnificent taste of good scallops. item not reviewed by moderator and published

This was the 1st time I made scallops and was nervous about over or under cooking them. They turned out perfect! Thank you for a simple basic recipe that I will use again & again!! item not reviewed by moderator and published
Excellent. I drizzled a little of the marinade over the scallops as they were cooking and then mixed a little in with the greens. Very satisfying. item not reviewed by moderator and published
Simple easy and oh so tasty. Just make sure you mince the thyme to liven up the flavors. Love Cat and her.simply tasty cuisine, she is the Giada of the Greek world and we need to see more of her! item not reviewed by moderator and published
Wonderful and easy dish, but grilled it on Big Green Egg Smoker which made it even more delish! item not reviewed by moderator and published
Absolutely delicious and so quick and easy. This has become a regular at our dinner table. I've also made this with basil as my husband prefers the flavor over thyme. item not reviewed by moderator and published
So easy to make and very, very tasty. I'll be making this again. I put it on a bed of spinach and added a bit of lemon juice - yum! item not reviewed by moderator and published

I made this dish for my husband who loves scallops. He couldn't stop raving about them. He kept saying they were the best he has ever had. I did use spinach in lieu of field greens and served with sauted portabella mushrooms. item not reviewed by moderator and published
We had a wonderful meal tonight centered around these amazing scallops. Even my 5 year olds ate them! I am sure having good fresh scallops makes all the difference in the world! item not reviewed by moderator and published
This couldn't have been any easier to make and everyone loved it, including my kids! I was a little worried that the greens would be a little bland without any kind of dressing but it was a perfect compliment to the flavorful scallops. item not reviewed by moderator and published
I made these scallops, and at first wasn't sure if the light seasoning would be enough, but it was great. I also wrapped them in bacon (so don't use the olive oil b/c the bacon releases enough fat both to flavor the scallops as well as sear them.) Result was awesome. And I've made them several times since then. item not reviewed by moderator and published
The flavor was excellant and it really is quite easy. The marinade is really more of a paste and we added more olive oil. Mistake! Then we had a saute instead of a sear going on. The flavor was still outstanding but I recommend sticking to the recipe amounts. item not reviewed by moderator and published
The taste of the sea scallops shines through in this simple recipe. I don't think the marinade would coat more than 6 jumbo sea scallops though. I also would sear the scallops for 2-3 minutes on each side if using large ones. Keep in mind that the internal temp. on the scallop should be 160 degrees. Anything more and they will be tough, anything less they will be transparent and raw tasting in the middle, yuck! item not reviewed by moderator and published

Easy greasy and tasty, too! item not reviewed by moderator and published
Easy, fast, and so flavorful! This is the only scallops recipe you'll ever need. item not reviewed by moderator and published
This was so good! The thyme was something different for me. The sauce that it makes while cooking is the best part on the greens. I made this along with wild salmon and dill for my first date with my high school sweetheart. He was very impressed. Now we're getting married! Thanks Cat for a great begining! item not reviewed by moderator and published
The recipe was great, just make sure to limit the salt. It was a bit too much. item not reviewed by moderator and published
This was very simple to prepare and was delicious. item not reviewed by moderator and published
Quick and easy to make and truly delicious! Just as good as scallops you'd get at any fine restaurant. item not reviewed by moderator and published
i made this for my boyfriend (a huge scallop fan) and he said thought they were the best scallops he ever had. it was simple to make and just exhibits the natural salty flavor of the scallops. item not reviewed by moderator and published

Because scallops are so expensive, I wanted a recipe that would really bring across the delicate flavor. This recipe really brings it home. (I have to admit, I added a splash of lemon juice before serving.) Sautaed some fresh mushrooms to serve beside and they were great!! --Thanks! item not reviewed by moderator and published
Missing something though...maybe bacon? item not reviewed by moderator and published
These were SO good! I couldn't believe how wonderful they were. I had marinated them for about an hour and a half instead of twenty minutes, dumped all the marinade in the pan with the scallops, and cooked them until they were golden brown. They were wonderful! If scallops weren't so expensive, I would make it all the time. item not reviewed by moderator and published
