Sea Scallops

  • 16 medium diver scallops, cleaned
  • 1/8 cup extra-virgin olive oil, plus more for searing
  • 2 teaspoons minced garlic
  • 1 tablespoon finely chopped thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups field greens

In a medium bowl, marinate the scallops with olive oil, garlic, thyme, salt, and pepper. Let them marinate for 20 minutes.

Heat enough olive oil to lightly coat the bottom of a medium saute pan over medium-high heat. Add the scallops. Cook quickly in each side until golden brown, about 1 to 2 minutes per side. Remove from the heat and place 4 scallops around a mound of greens. Repeat.

    Sea scallops are not prepared often, due to the price, but when they were on sale, I jumped at the chance. This recipe is perfect, to truly experience the magnificent taste of good scallops.
    Did not like the taste of thyme with the scallops.

    Excellent. I drizzled a little of the marinade over the scallops as they were cooking and then mixed a little in with the greens. Very satisfying.
    Simple easy and oh so tasty. Just make sure you mince the thyme to liven up the flavors.

    Wonderful and easy dish, but grilled it on Big Green Egg Smoker which made it even more delish!
    Absolutely delicious and so quick and easy. This has become a regular at our dinner table. I've also made this with basil as my husband prefers the flavor over thyme.
    So easy to make and very, very tasty. I'll be making this again. I put it on a bed of spinach and added a bit of lemon juice - yum!

    I made this dish for my husband who loves scallops. He couldn't stop raving about them. He kept saying they were the best he has ever had. I did use spinach in lieu of field greens and served with sauted portabella mushrooms.
    We had a wonderful meal tonight centered around these amazing scallops. Even my 5 year olds ate them! I am sure having good fresh scallops makes all the difference in the world!
    This couldn't have been any easier to make and everyone loved it, including my kids! I was a little worried that the greens would be a little bland without any kind of dressing but it was a perfect compliment to the flavorful scallops.
    I made these scallops, and at first wasn't sure if the light seasoning would be enough, but it was great. I also wrapped them in bacon (so don't use the olive oil b/c the bacon releases enough fat both to flavor the scallops as well as sear them.) Result was awesome. And I've made them several times since then.
    The flavor was excellant and it really is quite easy. The marinade is really more of a paste and we added more olive oil. Mistake! Then we had a saute instead of a sear going on. The flavor was still outstanding but I recommend sticking to the recipe amounts.
    The taste of the sea scallops shines through in this simple recipe. I don't think the marinade would coat more than 6 jumbo sea scallops though. I also would sear the scallops for 2-3 minutes on each side if using large ones. Keep in mind that the internal temp. on the scallop should be 160 degrees. Anything more and they will be tough, anything less they will be transparent and raw tasting in the middle, yuck!

    This was so good!The thyme was something different for me. The sauce that it makes while cooking is the best part on the greens. I made this along with wild salmon and dill for my first date with my high school sweetheart. He was very impressed. Now we're getting married! Thanks Cat for a great begining!
    The recipe was great, just make sure to limit the salt. It was a bit too much.

    i made this for my boyfriend (a huge scallop fan) and he said thought they were the best scallops he ever had. it was simple to make and just exhibits the natural salty flavor of the scallops.
    Great recipe
    Because scallops are so expensive, I wanted a recipe that would really bring across the delicate flavor. This recipe really brings it home. (I have to admit, I added a splash of lemon juice before serving.) Sautaed some fresh mushrooms to serve beside and they were great!! --Thanks!
