I could do shots of the sauce from this recipe, it's soooo delicious. There are various versions of Cat's recipe online w/ minor changes in the choice of liquid. Yes, you need to brown the seasoned chicken first, combine ingredients for the sauce and then add the chicken to the sauce -- grab a glass of wine and enjoy the smell as sauce and chicken simmer. And, spoiler alert: I also only use chicken thighs. . . I know, I know. . . but I'll exercise and eat vegetables the rest of the week. I also top the chicken and the dish with a generous helping of feta cheese. Using feta adds a nice Greek flare to me, not a Greek bone in my body but I love Greek food.

I'm not a fan of cinnamon in meat dishes, so I cut it to 1/2 teaspoon, which gave it a great yet subtle flavor. I also dredged the chicken pieces in seasoned flour and added a can of chicken broth with the water - we love the "gravy" and wanted plenty go around. The chicken was so tended that it fell off the bone, and the extra gravy made enough for two whole meals. This is one of our favorites!

I too have a picky teenager who doesn't like variey and he loved this. I try to make at least one new meal a weak and the family decides if it is a keeper or not. Most often he is a big NO. This one I didn't even have to ask, he volunteered! I myself am not a big cinamon fan, but with the other combinations it just fit so well.

Great subtle flavors. Absolutely delicious and very easy to make. I will make this again.

I have a fussy grandson when it comes to trying new recipies. He loves anything with cinnamon, so figured he and his sister would like this. I used one cut-up chicken. He almost couldn't stop asking for more. Thought sure I would run out of chicken before they stopped eating. This FAST FIXIN' recipe is a definite hit. Keeps asking for me to make it again! If your family likes cinnamon, they will LOVE this recipe. Keep the recipe as Cat has it. Don't try to change anything.
    Happy eating,
    Elsie

My husband is from Greece and we've eaten Kapama there with beef as well. This replicated the recipe exactly and made my husband feel he was back home. It is very straightforward and worked perfectly. My kids are picky but said it was the best chicken they've had! Love how Cat incorporates the Meditteranean flair into many of her dishes. This is a keeper!!!

I made this chicken dish last night and I did add the chicken browning step. We cleaned up the leftovers tonight. It was a big hit!. My daughter took some to work today for lunch and her co-workers were asking what she was eating that smelled so good. It is a definite keeper for my recipe file.
