I have made this recipe for a couple of potlucks during the summer and it was a big success!! Everyone loved it - and there were no leftovers! The hardest part was cracking the coconut in half. Once I accidentally put the side of the coconut with the two holes punctured (the eyes I call it on top of the pineapple and the sorbet leaked into the plate of fruit. Everyone thought it was supposed to be like that so I didn't say anything except that the combination of fruit and sorbet was delicious. Luckily, the fruit was gone so quick it didn't get soggy. I bought homemade sorbet and much of the fresh fruit from the Avila Valley Barn which made the dish even better for out Maui Wowie potluck! The presentation is gorgeous. This was a big success this summer. Everyone loved it! You can also improvise fresh fruits that are in season. Enjoy!
