Directions
Bring 1 cup milk, 2 tablespoons flour and 1 chopped garlic clove to a simmer, whisking; stir in 1 pound grated sharp cheddar cheese until smooth. Add some horseradish and grainy mustard; serve with pretzel rods for dipping.

Don't boil milk with flour. Make a roux with butter and flour, cook the minced garlic briefly in the roux, then add the milk, stirring well. Add the cheese, mustard and horseradish. Stir well. Serve and enjoy!
