Ingredients

  • 3/4 cup white sugar
  • 1/2 stick butter
  • 1/2 cup light corn syrup
  • 1 (3-ounce) box cherry gelatin dessert
  • Nonstick vegetable cooking spray

Butter or spray nonstick vegetable cooking spray onto parchment lined cookie sheets. Arrange half of the lollipop sticks on each and set aside.

Cook's Note: When measuring corn syrup, spray measuring cup with nonstick spray as corn syrup will pour out smoother.

In a small saucepan over medium heat add sugar, butter and corn syrup together until sugar has dissolved.

Slowly bring to a boil, stirring frequently. Insert a candy thermometer into syrup and continue cooking until temperature reaches 300 degrees F. Remove from heat. Stir in gelatin until smooth. Cook's Note: This sugar syrup is very hot and can cause a painful burn!

Using a metal tablespoon and working quickly, drop heaping spoonfuls of lollipop syrup on end of each lollipop stick. Cool completely. Wrap each sucker in plastic wrap and store in an air tight container.

    Made a bunch of these (80. Great taste. Made a couple of changes based on other reviews. I didn't add any butter. I only brought them to 275 degrees (soft crack. I made one batch brought to 300 degrees (hard crack but they became a darker carmel color with a more pronounce carmel flavor. I also found that the lollipops made with red, orange, and yellow flavored jellos had better color than the ones made with purple or blue colored jellos. No matter which jello was used the flavors were outstanding...I had never made lollipops before, but found it fairly simple.

    These were fun to make, but you do have to work fast. We made the mistake of buying plastic sticks - and they started to curl after pouring the hot sugar on them. I will use paper sticks next time for sure. I wasn't happy with the "carmel" like color either. We used blue jello - and they turned out more turquoise color. Oh well. The kids LOVE them, and I know I will be making them again.
