Ingredients

  • 1 1/2 cups vegetable oil
  • 3 cups sugar
  • 8 eggs
  • 4 cups flour
  • 2 tablespoons baking powder
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1 teaspoon salt
  • 2 teaspoons ground ginger
  • 6 cups Golden Delicious or Granny Smith apples, diced small
  • 2 cups walnuts, toasted, optional
  • Confectioners' sugar
  • Whipped cream

Directions

Mix together the oil and the sugar. Add the eggs 1 at a time, beating after each addition. Sift together the flour, baking powder, cinnamon, nutmeg, salt and ground ginger. Add the dry ingredients to the wet ingredients. Fold in the apples and the walnuts. Bake in 2 (9-inch) greased and floured cake pans for 1 hour in a preheated 350 degree oven or until center is done. Garnish with confectioners' sugar and whipped cream

    really good cake and I sure will make it again, it does make a lot for two 9 inch pans so i used two Springform, same size (9 inch

    I think the ingredient quantities are off. 2 Tablespoons of baking powder caused my cakes to overflow the pans and left me with a huge mess!

    We've been making this recipe for 10 years as of 2010. Sometimes I cut the recipe in half and other times I make the full recipe and freeze half to eat later. It is a huge, moist, flavorful, and delicious cake! Highly recommend it fo make any day extra special!
