Ingredients
- 1 hot house cucumber, thinly sliced, or shaved
- 1 tablespoon fresh lemon juice
- 2 tablespoons olive oil
- Kosher salt
- Freshly ground black pepper
Directions
Put the cucumber, lemon juice, and oil in a small bowl, and toss. Season with salt and pepper, to taste.

I added thinly sliced celery to this recipe and for some reason it goes extremely well with the citrus. The signature taste of celery disappears and you have this wonderful, crunchy, delightful thing going on in your mouth.
