Chicken and Wild Rice Casserole

  • 3 cups cooked, chopped chicken breasts
  • 1 package quick cooking wild rice, cooked according to package directions
  • 1 package frozen French green beans, thawed and drained
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 3 tablespoons flour
  • 1 cup chicken stock
  • 1/2 cup cream or milk
  • 1/2 cup grated parmesan cheese
  • 1/4 cup slivered almonds

Preheat oven to 350 degrees. In a buttered casserole dish. Combine chicken, cooked rice and green beans. In a saucepan melt butter over medium high heat. Stir in onions and cook for 1 minute. Stir in flour and cook for 1 minute. Whisk in chicken stock and bring to a simmer. Whisk in cream or milk and return to a simmer. When sauce has thickened pour over mixture in casserole dish. Sprinkle with parmesan and almonds and bake for 30 minutes

    I didn't think the dish was bland, I mean my family love it. although I replaced green beans with spinach and left out the almonds. to fix the blandness, you can season or marinate the chicken in anyway, use different rice, or add whatever you want to better suit your taste
    My family and I love this recipe, it is delicious. I do bake my chicken breasts fresh each time and season with some spicy seasoning to give it some flavor. The only changes I make are green beans from the can, and I leave off the almonds, other than that, this is a fantastic and easy dish!
    Bland. I added 1 pound spicy sausage sauteed with onions. I used Uncle Ben's long grain and wild rice (not quick cook. I also added mushrooms. Much better.
    I liked this, but my husband loved it. Since I really cook this kind of stuff for him, I'm rating it higher than I would for me. I'd been looking for a good chicken / wild rice casserole recipe, and this was certainly the flavors I was looking for. Trying with a bag of microwave-steam green beans from the produce section next time. Frozen green beans are gross. :
    It was very delicious! However, I wasn't a huge fan of the wild rice. Pretty good, though. :
    Bland. Adding mushrooms helped but overall not worth trying again.
    I thought this dish was very tasty, but it was not exactly the consistency of
     a casserole and not watery enough to be called soupy, but somewhere in between. Used parmesan cheese freshly grated and toasted the almonds
     before hand. Served with crusty garlic bread it made a nice hearty meal.
    This was an awesome midweek meal that the whole family loved after some additions. I added garlic with the onions, and lots of extra vegetables - cooked broccoli, peas, corn etc. - anything you want to 'hide' to add nutritional value to a great tasting meal!
    this recipe is pretty easy to prepare and my whole family loves it. save the beans for a side dish and replace them with sauteed fresh mushrooms. yum!

    This recipe is so simple, and yet so delicious! I love wild rice, so any recipe that calls for wild rice, I have to try it. I had some leftover chicken breasts that had been grilled on the bbq, and that added a nice flavor to the dish. I also added corn and garlic to the recipe and served this with turkey gravy; because my family loves sauces. Overall, this is a great recipe that you are able to customize to your own liking.
    This dish was great. My children loved it. Even though there not big fans of eating vegetables. It was so easy to prepare and didn't take long at all. Great for working mom to prepare after a long day of work.
    I am a super picky eater so I'm always on the look out for dishes I can bring to parties that I'll enjoy as well as all the other guests. I left the onions out of this dish and added a handful of cheddar cheese. I also used canned French green beans instead of frozen. Everyone loved it and the pot was empty before the guests even finished time I'll have to make a double batch.
    This dish was very good. Next time i will try carrots also.
    I think marinating the chicken in some complimentary flavor would greatly enhance this recipe.
    This is a great recipe for someone lookin for something quick and easy. I was able to make this with my 4 week old son in one hand. It turned out excellent. My 4 year old loved it!

    this dish is so easy to make...but a little bland. I usually add a little garlic and pepper, then its perfect.

    Wonderful recipe - I used store-bought rotisserie chicken, and added sherry to the sauce. Will try adding mushrooms next time. Husband keeps asking me to make this again!
