It was good but not the best I've had.

I only made a few modifications. I substituted the 15 oz can of diced tomatoes for a 28 oz can. Once cooking was completed in the crock pot, I transfered the meal to my dutch oven, set the burner to med heat, added about 1/2 lb. of uncooked egg noodles & simmered, covered, stirring often, until noodles were tender. After serving into bowls, I sprinkled with grated fresh parmesan cheese.

Excellant! I love good slower cooker recipes. I used chicken breasts instead of thighs only because that is what I had. I also cooked it on low for 10 hours. It was wonderful. The veggies and broth were great with a side of angel hair pasta. Give it a try. You won't be disappointed
