You can create up to five timers

Ingredients

  • 1 cup shredded cooked chicken
  • Salt
  • Pepper
  • 1 jar salsa
  • 3 corn tortillas
  • 2 cups monterey Jack Cheese, grated
  • 1 can black beans, drained and rinsed
  • 1 tomato chopped
  • Sour cream

Directions

Preheat oven to 375 degrees. Season chicken with salt and pepper. Set aside. Pour salsa in bottom of baking dish and spread around. Fill 3 tortillas with cheese, beans, tomato and chicken. Roll up. Place in baking dish and top with more salsa and more cheese. Bake for 30 mintues or until bubbly. Serve with sour cream

    I will make this again and again - I lightened them up with low carb/low fat tortillas, reduced-fat colby/monterey jack cheese, and added diced onion to the mix. I also used canned petite diced tomatoes - I made six instead of three (half the tortillas with salsa, the other half with green chile sauce. Shredded chicken is alien in the South, so I poached chicken breast strips for 12 mins...turned out yummy :0

    My husband and I, neither of which are great cooks, tried this recipe over the weekend. Not only was it goof-proof, but it was FABULOUS!!! We added onions, which made a great recipe even better!!
