Yes, this recipe is a little labor intensive, but if you're cooking with friends and family it's a lot of fun. I once substituted ricotta for the goat cheese, and it was just as delicious. I use toothpicks to hold the rolled chicken together, it's easier to coat and saute that way. Jarred roasted red peppers are a great time-saver, and using the olive oil from the jar for the saute adds great flavor. item not reviewed by moderator and published
I made this a while ago. I added one thing and that was a thin slice of prosciutto ham which made the flavor jump out a little bit more. I took left overs to work and gave samples of this and everyone loved it. Very tasty. Very happy eating it. Great recipe for crowd pleasers!! item not reviewed by moderator and published
This recipe is great! The flavor combination of goat cheese, spinach and roasted red pepper is so good, and the chicken comes out so tender and juicy. item not reviewed by moderator and published
This recipe was the most complicated I've tried, but I haven't been cooking for long. I had a few friends over the first time I made it, and they haven't stopped asking when I'm making it again. item not reviewed by moderator and published
