this was great, and I tried a little lemon on the chix as well. BUT, for tenderness, soaked the chicken breast in milk for an hour first. I do this all the time with chicken breast and have done it up to 5 days. Its enzyme make the breast like butter-can't be overcooked-and cut it with a fork: works great for this specific recipe!

Used cherry tomatoes instead and squeezed some lemon on the chicken. Everyone loved it!
