One of the most delicious chicken salad recipes I have ever tasted. I've made it for meetings, showers and parties and everybody always wants seconds and everybody always wants the recipe. Absolutely delicious!!! I follow the recipe exactly with no substitutions and even cook the chicken the way Ina does. It's incredibly moist when you do it her way. The only thing to be careful of is the amount of salt. I like a lot of salt in my food but start with a fourth the amount and add. You can't take it out but you can always add!

Excellent! Made this for an end of the year golf group and it was a hit! I used Costco's roasted chicken and used only the breasts. I did add dried cranberries to the recipe, which I think everyone liked. But, only two servings for a whole chicken breast? That's a bit off, especially for a group of ladies!

I have made this recipe dozens of times and its delicious. My husband begs me to make it. I always just salt to taste but for some reaso this the last time I followed the instructions exactly and used 2tsp of salt like it describes, and it was unedible. Definitely salt to taste. 1/2tsp was much better. This is definitely not just a preference issue either, I tend to be a heavy salter, this was unedible. You can't taste anything but salt, a glass of ocean water isn't as salty. I threw the whole batch away and started again.

Loved this chicken salad. The nuts, grapes and the fresh tarragon put Ina's recipe over the top! And as other reviewers have mentioned...what's with the "too much salt" comments? Always salt and pepper to your taste, and take into accout, if you are using a store bought rotisserie chicken, they are heavily salted already! It's easy to see why this was a favorite at Ina's restaurant!!

This is an EXCELLENT Chicken Salad recipe... I have been looking for a recipe that had some nice herbs in it and this fits the bill! I also added an Apple, chopped (1/2 inch dice, and 1/2 teaspoon dried dill. (Another recipe referred to dill as adding a bit of "pickle flavor" without actually adding pickles. I like pickles but some do not. The sour cream was a nice addition to cut back on mayonnaise.
For those of you questioning the salt. It is listed in the ingredients but no amounts... amounts are listed in the directions! Perhaps the amounts are too high for your personal preferences but it is up to the individual chef to add the amounts they prefer! (Just saying! How many times have you seen a chef on TV taste their creation to adjust the seasonings? I have seen it all the time!!!! Try this recipe and if you want to, leave the salt out but I would recommend adding a bit to the chicken as it roasts. Enjoy!

Am I missing something? A couple of rants about it being to salty I don't see an amount for the salt, so if it was to salty you added the salt. This is really very good.

If it hadn't been for way too much salt, this would be the best chicken salad EVER. Why do all the chefs use so much salt??? Even McDonald's has finally gotten the message that too much salt is unhealthy. Aren't they aware that salt can cause high blood pressure -- even in kids -- which is one of the reasons for such an increase in kidney problems and other issues? Please, cut back on the salt! Otherwise, great recipe.

This is a delicious chicken salad recipe. As I have made a few time, I have found that specific ingredients are key, such as using Hellmans, toasted/roasted walnuts, & fresh tarragon (french and regardless of how well one cooks chicken, store bought (Publix rotisserie chicken works best.

ANOTHER FANTASTIC RECIPE FROM INA. THIS SALAD WAS PERFECT. THE CHICKEN ROASTED PERFECTLY (COULD HAVE STOPPED RIGHT THERE AND EATEN IT JUST LIKE THAT ALONG WITH THE CRUNCY NUTTY ROASTED NUTS AND THE COOL CRISP GRAPES ENVELOPED IN THAT CREAMY WONDERFULNESS ACCENTED WITH (ONE OF MY FAVORITE HERBS THAT TOUCH OF TARRAGON. JUST LOVED IT!
