    Delicious yet again. The best chicken salad recipe hands down. I used the breast from 2 costco rotisserie chickens, it makes it easier and the chicken is very moist.

    This is a very good base for any chicken (turkey salad.
    I used leftover turkey breast,added some celery and instead of grapes
    I used apple (grated.Tarragon is one of my families favorite herbs.

    Once again, I am so disappointed by people who commented about the salt used in the recipe. Yes, Ina always uses Kosher salt in her recipes. The cook who prepares the dish for a special occasion (particularly something that was not cooked before should use a bit of common sense. The spices like salt and pepper should always be used with your own discretion, less or more for your own likeness. This salad is great, I used just the same amount of salt she specifies (kosher and very happy with the results.

    I make this chicken salad recipe all the time. In fact, I just made it last Saturday for the bridesmaids in my daughter's wedding so that they would have something to eat after they got their hair done, since we weren't eating until late that evening at the reception. Served it on croissants along with a vegetable tray and everyone loved it. One of the bridesmaids just emailed me for my chicken salad recipe and I emailed this one to her.

    Using my microwave poultry cooking directions, I prepared about 1.6 lbs of skinless, boneless chicken breasts for this recipe. After splitting and seasoning to taste, I cooked them covered for 15 minutes in about 1/2 cup of lemon juice. They were very moist and delicious. I was not sure about the grapes and nuts but they are very good. The dressing is thick enough to not make the other ingredients soggy. Did not have tarragon so I used curry powder. Wonderful flavor, moist, quick and easy.
