    yes, as many have said, 2 tsp is WAY too much salt. I read the reviews before making this and pulled out my 1/2 tsp, but decided to only put half of that (1/4 tsp and it's about perfect if not even a little less than that. I can't even imagine what it would taste like with the full 2 tsp. I eat it as an open faced sandwich instead and I WILL make this again.

    Ina omitted the amount of salt needed from her FN recipe when she should have omitted the salt or used 1/4 teaspoon sea salt at the most. Seedless red grapes add a much nicer flavor than green. If no grapes, add 1/2 teaspoon red wine vinegar--very tasty and elevates the flavor of the chicken to very very yummy. I omitted the pecans and used only the 1/2 cup of walnuts chopped and added some chopped celery. Not fond of tarragon, used my homemade dried dill and thyme from my garden. Halve the mayo and sour cream. Way too much. Ina uses too much salt and Ina and Paula always use too much mayo and/or butter and it really shows.

    Hi everyone. I've read the reviews that talk about how much salt Ina uses. Ina uses Kosher salt. If you are using regular salt (like Morten's, then you need to cut the amount in half. So if the recipe calls for 2 tsp of Kosher salt, you'll want to only add 1 tsp of regular salt. Happy cooking!

    Actually, I used to hate all kinds of salads all my life until last year. My husband and I watch Barefoot Contessa all the time. He always tells me to put most of her recipes to save for us to make. I looked at him in a weird way when he wants me to try that chicken salad.

    So I bought two cooked chicken and dried tarragon since I couldn't find a fresh one in my supermarket. However I forgot to buy kosher salt since I never had it before in my life, I used regular salt instead. However I read this reviews here saying 2 teaspoon of salt or kosher salt, I checked the receipe, it didn't say how much salt unless you mean you heard Ina saying on TV which I must have missed. But I always have a common sense on using less salt than measured. I put extra glazed walnuts and glazed pecans for crunchiness. Once, mayo, sour cream (that's the one I hated all my life until I had to try this salad with sour cream for the first time tarragon, salt, and pepper are mixed and being put aside for several minutes to let tarragon flavor spread. Then I dump in chicken, grapes and nuts. For lettuce, we'd prefer using Boston lettuce because it's great with that recipe.

    Oh boy, we're going NUTS over this recipe. I could eat this salad every day if I want to!

    If some of you felt it's inedible after putting in too much salt, try again with less salt or none as you prefer, this time without chicken in it so you can taste to see if it's too salty so that way you can re-do.

    I have been doing weight watchers for over 4 months and this chicken salad is only 3 points when you make slight modifications. We changed the sour cream and mayo to fat free on both (and changed it to 2/3 mayo and 1/3 sour cream. We didn't use hardly any salt -- only on the chicken when roasting. And, we added 3 chicken breasts....to make this last longer. Also, I added red grapes, celery, red onion, carrots, and a couple of sweet pickles. With all the adds, you lower the calorie and point totals and it's a bit dryer than the original recipe. But, it's amazing and I make it every week for lunches for both me and my husband.

    I worship Ina and couldn't wait to try her chicken salad recipe. But my goodness, Ina! The amount of salt in this recipe spoiled it completely. Next time, I will salt to taste. In this day and age, it's frustrating to have to throw out food, but as another reviewer said, the salt content made this inedible!

    Ina, you absolutely nailed it with this recipe. This is by far the best chicken salad I have ever had. I will try again with different fresh herbs to please other pallates. (My daughter does not care for tarragon. I did add a little diced celery for added crunch. WOW!!! A winner for sure!!!!

    Way, way too much salt. I only did half and neither the kids nor I could eat it. Had to throw the whole thing out. Dressing was extreemly thick. Yuck.

    This chicken salad would have been delicious, but the salt overpowered everything! It was barely edible. I would recommend this recipe, but I would certainly eliminate the salt added to the dressing. Otherwise, the chicken was very moist and the mayo and sour cream are a nice combination.
