Ingredients
  • 2 cups chopped rotisserie chicken, skin removed
  • 1/2 cup diced celery
  • 1/3 cup diced carrot
  • 1/3 cup diced red onion
  • 1/2 cup mayonnaise with olive oil
  • 2 tablespoons yellow mustard
  • 1 teaspoon celery salt
  • 1 teaspoon granulated garlic
  • Pinch of paprika
  • Freshly ground pepper
  • 6 whole-wheat sourdough rolls, split and toasted Lettuce and tomato, for topping
Directions

Combine the chicken, celery, carrot, red onion, mayonnaise, mustard, celery salt, granulated garlic, paprika and 1 teaspoon pepper in a bowl. Mix until combined.

Serve the chicken salad on the toasted rolls with lettuce and tomato.

Are you kidding me?? One tsp pepper?  This was inedible!  I am going to try to rinse off the mayo and add spices and mayo again minus the pepper.  This also was a little salty too.  I would say 1/2 tsp pepper and 3/4 tsp salt.  Other than that, it was OK.  I can't really tell too much, because all I could taste was pepper and salt. item not reviewed by moderator and published

Holy flavor, Batman! This was SO GOOD! It was very tangy, so pass if you're into sweet chicken salad. If you're not a big mustard fan, cut back because the mustard flavor is definitely dominant. It was pretty good the only thing I add is I used the canned chicken that comes ready just have to drain and I add everything above plus a little sugar and I take some grapes and cut them up into 4 pieces and add those in to also instead of putting it on a burger bun I cut a croissant in half and butter both ends and put it in the oven until its golden brown then add the chicken spread to the croissant is delicious mouth watering item not reviewed by moderator and published
This chicken salad is a real winner-winner chicken dinner!! I prepared it exactly as Hunter's recipe stated. Next time I will cut the mustard down just a bit, but otherwise, it's right on point! I eat it as prepared in a sandwich, but it's also nice to add some grapes, toasted pecan pieces and dried cranberries and just eat plain for a nice dinner salad. This is probably my favorite chicken salad recipe. The diced veggies and chicken were a little big for me so I put everything in a food processor. Loved this recipe! Although I didn't follow the measurements exactly, I just eyeballed it... it turned out great! I would say that I minced the vegetables instead of diced them and I shredded the chicken in a food processor! I used reduced fat mayo and a mix of spicy brown and yellow mustard. Okay sandwich. I can't say that the taste of this is any better than a 1000 sandwiches I've had (I'd even hazard saying that some deli's are better. Another issue I have is with how big the vegetable pieces are--diced is too big. I couldn't believe how good this recipe is; wow, even my 3 year old grandson loved it and ate a whole sandwich. Also, my husband is very particular about chicken salad and he LOVED this recipe. II made this today for lunch. I had 4 cups of chicken so I added 1cup of mayo and 4 tablespoons of mustard. I should have only used 3 tbsp. Everything else was the same measurements. I wouldn't add anymore seasoning because it would be very over powering. I feel like there is something missing but it was good. I put it on a low fat hamburger bun. I tried this out as something different to put in my boyfriend's lunches for work. I was worried because he isn't a huge fan of mustard even though this recipe doesn't call for too much. Let me just say he loves it. With or with out lettuce and tomato it was definitely a keeper. Congratulations, Hunter! This is FANTASTIC! I actually made this for dinner tonight, since I needed something light and easy. My goodness - I could eat this for every meal. The only thing I added was a bit of chile powder, since we like the little bite that it adds. And to the individual that gave three stars - "What's the difference between this and most chicken salad sandwiches again. Besides a famous guy's son made it?" - you must have a weak palate, because not all dishes are created equal. But, if you think an awesome chicken salad is so easy then let's see a better one from you. Go ahead - post it and I promise I'll try it. This is very tasty and easy to prepare....I already had all the ingredients except red onion. I swapped some mild organic yellow onion and it was still great. It has a nice texture from the carrots/celery. I made sure I chopped them into pretty small pieces so no one would get too big of a chunk when biting into the sandwich.
