Chicken Salad Sandwiches

Ingredients
  • 2 cups chopped rotisserie chicken, skin removed
  • 1/2 cup diced celery
  • 1/3 cup diced carrot
  • 1/3 cup diced red onion
  • 1/2 cup mayonnaise with olive oil
  • 2 tablespoons yellow mustard
  • 1 teaspoon celery salt
  • 1 teaspoon granulated garlic
  • Pinch of paprika
  • Freshly ground pepper
  • 6 whole-wheat sourdough rolls, split and toasted Lettuce and tomato, for topping
Directions

Combine the chicken, celery, carrot, red onion, mayonnaise, mustard, celery salt, granulated garlic, paprika and 1 teaspoon pepper in a bowl. Mix until combined.

Serve the chicken salad on the toasted rolls with lettuce and tomato.

Holy flavor, Batman! This was SO GOOD! It was very tangy, so pass if you're into sweet chicken salad. If you're not a big mustard fan, cut back because the mustard flavor is definitely dominant. It was pretty good the only thing I add is I used the canned chicken that comes ready just have to drain and I add everything above plus a little sugar and I take some grapes and cut them up into 4 pieces and add those in to also instead of putting it on a burger bun I cut a croissant in half and butter both ends and put it in the oven until its golden brown then add the chicken spread to the croissant is delicious mouth watering item not reviewed by moderator and published
This chicken salad is a real winner-winner chicken dinner!! I prepared it exactly as Hunter's recipe stated. Next time I will cut the mustard down just a bit, but otherwise, it's right on point! I eat it as prepared in a sandwich, but it's also nice to add some grapes, toasted pecan pieces and dried cranberries and just eat plain for a nice dinner salad. This is probably my favorite chicken salad recipe. The diced veggies and chicken were a little big for me so I put everything in a food processor.
