Dear Trish,
Thanks for the idea. I went out of the box on this one because I am not a baker, yet. So here is what I did with what you taught me with the basics (can not thank you enough!. I used butter with olive oil in it, chicken stock, boneless, skinless chicken thighs and 1/2 pkg of frozen mixed veggies. I sauted celery and onion on their own and added it to my mix of cut chicken and pre-cooked mix veggies and then made the sauce. I can not express how great this turned out and I have been cooking for a very long time. At 56 I have turned out some meals and this will be a main stay for a very long time. Best to you.

10 minutes to prepare. Delicious and easy. Substituted: Chicken stock for veggie stock. Used 1 large can of Veg-All instead of carrots and potatoes. Made twice as much "sauce" and used the extra to serve on top of the cooked pie when plating.

Absolutely delicious! I modified just a little from the original by using chicken stock instead of veggie. This was a major hit...we'll definitely have it again. This one is a keeper.

My daughter is pregnant but does not find veggies appealing. This recipe did the trick. She loved the taste and had her veggies as well. Her husband also thought the recipe was wonderful

Loved the pot pie! Definitely will make this again. Added whatever veggies I had and didn't miss the chicken at all.

I made this tonight for dinner it is incredible . Everyone loved it and talked about how no one missed meat in it. It was easy to make and never thought it would turn out this good. Her sunday pot roast is the best I have ever had. Also the corn dip is a huge hit. Just love her show and recipes I would give this a 10 if I could Cant wait to more of her shows

This was the first time I saw Trisha's show, and what a great start! I love to see vegetarian dishes featured!
This is the basically the way I make my pot pie - but I add "chick" in the form of chickpeas! I mash cooked chickpeas (garbanzos and add to the sauteed onions, and veg stock. I don't use a roux.
Makes a great shepards pie with mashed potatoes!
