    Well, to start off I'll tell you that the salad that I made turned out amazing! Its the best salad I've ever had! But, when I found this recipe, I liked the vegetables and thats about it. I used corn, lettuce mix, carrot, celery, onion and added wheat and barley. I thought that the dressing sounded so gross that i chose to make my own using balsamic, white wine and red wine vinegar and olive oil. Making the salad as is would be a mistake, I suggest that if you do make it you make some changed like the ones above, otherwise you won't turn out with the salad you wanted.

    This was a great and "showy" salad. I did place 3 cooked cold shrimp in the bottom of my mold, which added another dimension. I added a bit more vinegar and used Reese's canned artichoke bottoms instead of fresh ones, but then went ahead and cooked them as directed. The results were delicious. The salad is a bit on labor intensive side, but is perfect to do ahead. All I added at the last minute was the dressing and the avocado. This will be in the front of my recipe box for sure.
