Chipped Beef on Toast

Ingredients
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons minced garlic
  • 1 tablespoon chopped fresh rosemary
  • 3 shallots, minced
  • 12 cups heavy cream
  • 1 teaspoon salt
  • 1 tablespoon black pepper
  • Chipped beef, for serving
  • Sourdough toast, for serving
  • Chopped fresh parsley, for garnish
  • Paprika, for garnish
Directions

In a small pan, melt 2 tablespoons of the butter and add the flour. Cook, stirring, until the mixture begins to turn a light brown color, about 4 minutes. Remove from the heat.

In a large saucepan, melt the remaining 2 tablespoons butter. Cook the garlic, rosemary and shallots until the shallots are translucent. Add the cream and bring to a boil. Add the butter-flour mixture, reduce the heat and simmer for 10 to 15 minutes, stirring occasionally. Add the salt and pepper and strain.

For each serving, heat 1 cup of sauce to a simmer, add 2 ounces chipped beef and bring to a boil. Pour the mixture over two to three slices sourdough toast and garnish with parsley and paprika.

Okay - No 12 cups of heavy cream - even if you were serving 20 people. Chipped beef is not escargot and should not cost a fortune. $20 on heavy cream? Don't think so. I had 1/4 lb left over prosciutto, chopped up a shallot and made two cups of white sauce with butter, flour and half and half and a little pepper. I have some canned buttermilk biscuits in the fridge which I'll bake in the morning, make some eggs, heat up my slumgullion of chipped beef (proscuitto) and it will be a great breakfast. Each serving requires 1 C of the cream sauce and this recipe makes 10-12 servings, so 12 Cups of heavy cream would be correct (or 10-12 C of heavy cream) for the amount of servings this recipe makes. If you don't need 10-12 servings then of course you can adjust recipe accordingly for your needs which would also save you money. Btw, Sam's Club has Land O' Lakes heavy cream Quarts for $3-$4 and 12 C would only cost around $9-$12 as you'd only need 3 of them. item not reviewed by moderator and published
Yes you are most certainly correct! The other people must not have fully read the recipe to see the numbers of servings this recipe yields nor the serving size per serving. 12 ounces nor 2 C as mentioned by other posters would not be enough sauce to serve for 10-12 people. 1 C heavy cream needed per serving so 10-12 C of heavy cream would be needed so each person would receive the 1 C of sauce for their serving.
