Chocolate Cake

  • 1 3/4 cups all purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup boiling water
Directions

Preheat oven to 350 degrees. Prepare two 9-inch cake pans by rubbing with butter, sprinkling with flour and tapping out extra. In a large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Mix together with a wooden spoon then set aside. In small bowl combine eggs, milk, oil and vanilla. Beat well with hand mixer. Slowly add boiling water and mix. Add wet ingredients to flour mixture and fold and stir until smooth. Pour batter into pans, dividing evenly. Bake for 30-35 minutes. Remove cake from pans and cool on racks.

The cake was really watery when I put it in the oven, but it did turn ot super moist. I would highly recommend cutting down on the water to 3/4 cup. I will try it again with less liquid. I mixed it together for our Christmas get together. Both the kids and the adults loved the taste and thought the cake was really moist. I love this cake, very moist and fluffy. I made it 2 hours ago. I sift everything, the flour, cocoa, and sugar. I mixed it together with a hand whisk (wooden spoon wasn't helping). I also mixed each wet ingredient one at a time together with a hand whisk. I only baked it for 25 minutes. I started to smell it, so I checked it, and it was ready. I was so excited to make this cake after reading the reviews! it sounded amazing. i mixed the batter, put it in my buttered/floured tins, let it bake in the oven, the good smells of chocolatey goodness filling my nose. Tested the cake with a knife, you know, all that good stuff. took the cakes out and let them rest. :) I was so stoked to try it. Absolutely loved this recipe. I've stopped using any store bought box cake mixes because of the trans fats and hydrogenated crap, and decided to be brave and try making one from scratch for my daughter's birthday cake. I read through the reviews and decided to make just two minor modifications, I used evaporated milk instead of regular, and I reduced the water to 3/4 of a cup, instead of 1 cup. It turned out a perfect consistency, was rich and moist and dense and fluffy all at the same time. It was also very easy to work with to transform the circles into a butterfly! The only thing I'll do differently next time, though is sift my cocoa powder, I think mine is a little old and had a few lumps that settled to the top of the cake. Um, Food Network? This recipe is IDENTICAL to the HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake recipe found on the back of the Hershey's Baking Cocoa can, and also on the Hershey's website. That being said, this recipe for chocolate cake is wonderful. Whenever I've attempted chocolate cake from scratch, it usually has a weird, flour-y and/or bland taste. This one has a great chocolate flavor, it's moist and dark, and just sweet enough. The batter is beyond thin -- it's actually watery, which is scary because it looks like it can't possibly bake, but it does. I split mine into two pans and needed the full bake time. Hershey's also publishes a chocolate frosting recipe to match this cake, and I highly recommend that too. It only needs cocoa for the chocolate flavor, and it's hard to find a recipe like that -- most chocolate frosting recipes require baking chocolate which you then have to melt. The instructions here from Cathy Lowe have a mistake in them -- you are supposed to add the boiling water at the end (AFTER blending wet with dry), not before. how runny the cake mix was. However, after baking the cake in it's entirety it was very good, I changed a couple of things. I used some instant coffee instead of hot water, I used Hershy's syrup intead of the cocoa and I used 2cups of flour. My cake didn't stick at all. I baked my cake in a glass pan. I have to say that this would be my first time making chocolate cake and I am so impressed with the recipe and myself. The only thing I did differently was to bake it in one 9 inch spring form pan for exactly 45 minutes, lessened the amount of sugar by maybe a tablespoon or so becuase I did not want it to be to sweet , omitted the vanilla (this was done inadvertantly and I replaced the vegetable oil with olive oil. Let me tell you the results were fantastic. It was dark, rich and moist. For those who claimed that their cake was a total disaster I am sure that you did not follow instructions. The majority of the ratings are excellent so you must be doing something wrong. Try again and I think you will be pleased. I don't think there is anything else I could do to make it perfect. After reading many good reviews on this chocolate cake recipe I decided to make it. The ingredients were all on hand-it sounded very easy. I used a bundt pan and cooked it for just less than an one hour. Unfortunately the cake is so moist that it fell apart even after sufficient cooling. I greased and floured the pan like I always do but it got stuck a little. Icing can always hide this type of misfortune. I used a easy buttercream recipe from this site. It tasted good, not very firm though so when I spread it on the crumbly cake it didn't look like my best culinary work. The taste was delicious- boyfriend approved. This recipe is absolutely fabulous! I have never even attempted to make a cake in my life, but I love to bake and I had all the ingredients...so I said, "what the hay!" I did however change a few small things: 1). I made standard size cupcakes instead so I lowered the temp to 325F and baked for 20 minutes. (Don't open the oven and check them, just get a thermometer that you can hang off the oven rack, set the timer for 20 min. and take out the pan. Cool in the pan for 1 min and cool completely on a rack.) 2.) I subbed brewed coffee for the boiling water as previously suggested. 3.) I added 1/4 tsp. cardammom because I love it. Yum yum! 4.) I used all organic ingredients, which probably does not make a huge difference except in the cocoa (Green & Blacks- best ever!) The flavor and texture are fabulous, however.....I give, what is the secret to keeping the cake from sticking to the pan? I've made this cake twice so far. The first time I followed the recipe exactly and experienced none of the problems other commenters have mentioned other than a tiny bit of sticking. I made this cake again yesterday adding some melted dark chocolate to boost the flavor and using parchment to line the pans. The cake got nothing but raves. I used a silicone Bundt pan.. It didn't stick at all but it was very soft.. it is not a firm cake so be careful when transferring or cutting.. Since I used one big pan, it took longer in the oven (> 1hr).. thanks item not reviewed by moderator and published
The recipe was easy, fast, and was one of the best tasting cakes I've ever had, but when I was getting it out of the pan, it crumbled into pieces, twice! One time i tried spraying the pan with Baker's Joy, and the next time I tried it with normal flour and butter. The shape of the pan may have something to do with what happened, as i was using a cupcake shaped pan for my niece's 2nd birthday. Cake came out great! As you are mixing the dry and wet components together, it looks like its going to be really thin, but bakes just fine! I made several adaptations to make it a little healthier, without any problem - used a 1/2 splenda, half sugar mixture instead of regular sugar and also used 1/2 whole wheat flour. No issues! I also followed the comments of someone below, and instead of using vegetable oil, I substituted 1/2 cup melted dark chocolate - it came out SUPER rich and was fabulous. Does it really matter whether Cathy Lowe got the recipe from somewhere else? come on ladies! I didn't shake the tin and level it off so my cake resembled a volcano - completely my fault. Also I only used 1 and a 1/3 cups of sugar and a cup of coffee instead of just boiling water and the result was a light tasty cake which I sandwiched with vanilla frosting. This is a unique recipe but it turns out just like the other reviewers have outlined. The batter is runny and it seems like it's raw when you pull it out of the oven, but it turns out a deeply rich and dark chocolate cake. The only problem I had is that I used a glass cake pan and the cake stuck (even after greasing/flouring the pan) so I would warn to not use glass pans. I have been craving chocolate cake with Cream Cheese frosting for 6 months or more and finally took the plunge and made one. Because this one had 5 stars, I gave it a try. HOWever, I'm not too keen on taking in too much sugar, so I replaced 1/2 a cup of sugar with a dark chocolate bar (with 85% cocoa) and it IS SUPERB!!! The trick (key) is to underbake it (not overbake) and to under stir (not over-stir) and you will wind up with the most delicious, moist cake you've ever eaten! This recipe could not have been easier, and this chocolate cake could not have been more delicious! It was moist and chocolatey, and just absolutely perfect. I made it with cream cheese frosting---which was also amazing. I baked for exactly 30 minutes and it came out perfectly. It was not dry AT ALL. I am hardly an expert, however, I have 2 comments on the not-so-good reviews here. If your cake overflowed the pan, it could very well be that you overworked the flour, releasing the glutens, which causes unwanted rising of the batter. Try folding the dry ingredients into the wet instead of beating to death with a mixer. Secondly, how can someone comment negatively when they changed the ingredients? I am actually not a huge baker. It is an area I have wanted to improve on so I decided (after looking at tons of recipes) to try this particular recipe because it was easy and had relatively good reviews. I followed the directions to the "T." My only addition was a cup of hot coffee instead of boiling water. My grandma taught me that. It adds a nice, richer chocolate flavor and no, it doesn't taste like mocha. Between the two layers I spread fresh whipped cream, sugared strawberries and more whipped cream. I did the same on top of the cake and surrounded the sides with the remainder of the whipped cream I made. It looked so pretty when plated and the light cream frosting and tart berry really complimented the chocolate. The reviews that say the batter is runny... well, you're just not used to moist delicious cake batter!! It's runny when you put it in the pans, but it comes out perfect - I've made this recipe. Test your cake in the middle(with a toothpick or similar) and make sure it's clean before thinking it's 100% done. If it takes longer than in the recipe be patient. Every oven is different. I have made this recipe numerous times for my family. It is moist, chocolatey,easy and delicious. I like to make it in a bundt pan and dust it with powdered sugar and berries. I have had a couple of times where the batter seemed to wet so I added a little bit more flour which I was nervous about since the whole "baking is a science" but it was still terrific! Also this is great to make with the kids, while dinner is in the oven and they are in their meltdown phase. It is ready in time for dessert! item not reviewed by moderator and published

Cathy Lowe basically just stole this recipe from the Hershey's Cocoa canister. All she did was instead of using 2 tsp of vanilla, she used 1 tsp. This ckae was a bit messy to make but very much worth it. Very moist and good. After reading previous reviews which stated their batter had been runny I added a pack of softened cream cheese to the batter and it made it thicker and all the more better! item not reviewed by moderator and published
