Chocolate Peanut Butter Covered "Hash Browns"

I have worked in a child abuse prevention center for 15 years and have served 75 children running the kitchen by myself-shopping, ordering[, menu planning, cooking dishes, etc. Having this freedom has allowed me to create yummy and unique meals for kids of all ages. I have been making these delicious cookie bars for 20 years for work and my family.....at work the recipe is quadrupled but this is the home version. It has come by many names but one child did refer to them as "Chocolate covered hash browns" and that name stuck at the center.]
