Ingredients
  • 1 celery rib, minced
  • 1 carrot, minced
  • 1/2 cup minced red bell pepper
  • 1/2 cup minced red onion
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced pickled jalapeno chili
  • 1 tablespoon minced fresh coriander leaves
  • 1/2 teaspoon salt
Directions
  • In a bowl stir together all ingredients and let stand, covered, 30 minutes. Serve salsa with tortilla chips or as a condiment.
