    We used very carmelized smoked sausage, fresh baby spinach and canned kindney beans. I microwaved the potatoes until they were cooked through and then cut them into chunks. I tossed all ingredients into a pot with the drippings from the smoked sausage and simmered them for about 15 minutes. It was absolutely fantastic. I will make this over and over.

    Fixed it and it came out very tasty...I didn't add the vinegar because I don't think that would have added to the soup...next time I'm going to use black eyed peas with the recipe..

    This is my new favorite soup by far! And I eat a lot of soup!!
    I did substitute white instead of red kidney beans, personal preference. The vinegar at the end adds such a great later of flavor, as does carmelizing the snot out of the kielbasa. Fabulous recipe-- I will make it again and again, even if it is not Christmas.

    i appreciated the few number of ingredients in this soup... yet that the end result was a truly beautiful looking & very flavorful soup. it was enjoyed by all. this will become a new basic favorite of our family, i feel.

    I can't believe how great this soup was! I added an onion and I couldn't find kale so I substituted swiss chard. So delicious!

    I just made this soup and it turned out pretty good. I added the bay leaf and an onion (I added the onion with the garlic as others did, and I think that added good flavor. I used canned kidney beans instead, so I just threw those in at the end, which made the cooking time a lot shorter. I used smoked turkey kielbasa from Trader Joes, which was really flavorful, and it's a nice lower calorie/lower fat option! I used a lot more greens than the recipe called for, since the veggies shrink up when they're cooked. I used the recommended amount of kale, plus a Trader Joes prepared bag of "southern greens," which included mustard greens, collard greens, and spinach. The combo of all those greens was really yummy! Next time I'd use a little less red white vinegar, and might do without the kidney beans. I don't prefer kidney beans too much.. or maybe it's because I used canned instead? The batch was HUGE so I'm freezing a lot of the soup for the rest of the winter :-

    I added onion and a bay leaf as well and it was very tasty. Also, I used chopped collards as I didn't have the time to deal with the kale. It was excellent. My husband and my kids loved it. I made multi grain rolls to go with it. YUMMY.

    I really like this soup because it is hardy and puts meat on your bones. I added onions, can corn, and finger potatos. The vinegar gives it a nice tangy flavor with the kale. A nice Texas Roll with this meal hit the spot. I will add a bay leaf to make it just a bit more savory. And, no it is not too much garlic as the previous writer posted. Also if you don't like Kale you could put Mustard or Collard greens or even Bokchoy. They are all in the same family so I am sure it is not going to taste bad.

    I was so excited when I heard Alton Brown make this on TV today. My grandma used to make "Portuguese Kale Soup" for me. I loved it! Unfortunately, she died and never wrote down the recipe. I was pretty sure this was it. At least, until I added the vinegar and tasted it. YECH. I think I would leave out the vinegar and mash up the potatoes a bit. Perhaps I'll try that next.

    This recipe was so good that my husband actually pulled me aside to tell me how wonderful it was. The most I usually get from him is an "it's ok", or just a nod that dinner was good.
