Such a great recipe!! I added a small wheel of camabert cheese to the stuffing to counteract the smokey chipotle and spicy cinnamon, then topped with a sauce I made with heavy cream, fontina cheese and a touch of fresh garlic. Served with sides of diced shallots and apples sauteed in butter and finished off with a bit of sherry and a light spinach salad. Can't wait to make this again!

seriously amazing!! I marinated them for 12 hrs...couldn't find oatmeal stout so i used Sam Adams Cream Stout. I did not have the chipolte chili powder so i used plain chili powder and instead of the mesquite honey i used 1 TBS plain honey and 1 TBS smokey jack daniels sauce. Not exactly the recipe but very very good!

FYI...we (myself and family members whom I allowed in my kitchen...made the chops per recipe. We then made two more pieces of pork...Roast and tenderloin...per recipe. Absolutly WONDERFUL. Although we are in California, anyone reading this and wants to try...DO IT ! P.S......FoodTV, get this guy on your show. Flavor and looks! Tell Oprah she missed a good one!

I found this to be too spicy. The pork tastes like it was soaking in beer (which it was, but I don't really like that taste.

This recipe was amazing....my husband looked over at my plate after he finished and asked if I was going to finish mine.....I handed it over and made a note to myself to double the recipe next time! Also, Rowan Finnegan was great! Give the guy a show!
