Ingredients
  • 1 pound (2 large breasts) boneless skinless chicken breast, butterflied
  • 2 tablespoons canola oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons Cilantro Herb Butter, recipe follows
  • Fresh parsley, optional, for garnish
Directions

Preheat a grill or grill pan over high heat.

Lightly coat chicken with oil and sprinkle each evenly on both sides with the salt and pepper. Grill chicken breasts for about 4 to 5 minutes on each side, or until thoroughly cooked; the meat should be solid white throughout and the internal temperature will read 165 degrees F. Remove from grill and immediately top with cilantro herb butter. Garnish with parsley, if desired. Serve as butter is melting.

Cilantro Butter:

Scampi Butter, recipe follows

2 tablespoons finely chopped fresh cilantro leaves

Follow the scampi butter recipe, but use only half of the garlic, and replace the parsley with 2 tablespoons minced fresh cilantro.

Yield: 12 servings

Scampi Butter (Base):

1/4 pound unsalted butter, softened

1 tablespoon minced garlic

2 tablespoons minced red onion

1 tablespoon chopped fresh parsley leaves

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

Dash white pepper

Dash Worcestershire sauce

1 lemon, juiced

1 tablespoon white wine

In a bowl, whisk all ingredients until thoroughly combined. Refrigerate until ready to use. Use the Scampi "base" to make different flavored butters.

Due to the weather not cooperating for bbq, I pan seared the chicken breasts in some olive oil. I then turned off the heat, topped them with the cilantro butter and covered with a lid for about 1-2 minutes. The butter combined with the juices from the chicken and made a wonderful sauce to spoon over the brown basmati rice and fresh asparagus I was serving them with. This was absolutely delicious! The herbed butter was light and zingy. We were able to use cilantro from our own herb garden. I omitted the onion (because we were out and I think it worked well without it. I also had to substitute lime juice for lemon, as we were short on that, too. To get the butter and "wet" ingredients to combine well, I just put the mixture in the microwave for 10 seconds. It made it just soft enough to wisk like the recipe called for. Then I put it in the fridge while I grilled the meat and it was set beautifully to melt later on the meat and sides. My daughter who doesn't care much for meat ate an entire chicken breast with this butter on it. I alter this receipt a bit. I also used half the lemon juice and I don't have a good grill pan so I baked the chicken for 30 minutes at 375 degrees instead. I spread a bit of the butter mixture on top of the chicken before cooking and on the other side mid-way through the cooking process. The recipe turned out very well, but I agree with the person who said there was too much lemon. It was extremely difficult to get the lemon to mix with the butter mixture. We whisked and whisked, but the watery lemon would not mix with the butter. Any suggestions on how to make this easier next time? I think I would use half the lemon. The cilantro butter is excellent on chicken! The chicken on sale this week was the skin-on/bone-in split chicken breast so we used that instead of butterflied skinless/boneless (which is always more expensive). First - this is a superb recipe, easy to make and full of flavor! When I make scampi butter I use commercially prepared clarified butters. These are extremely pure butters and are shelf stable in your pantry, even after you open them. As a result they are truly soft when you go to whisk the ingredients together. A bonus is that with a stable butter your scampi or other compound butter will stay fresh in the refrigerator for weeks. Because of the butter that goes on the chicken is a scampi butter my husband and i have renamed this dish to Chicken Scampi. This was really good and i felt that i had ate something that didn't weight me down. The compound butter (scampi butter) is fabulous and can be used on many other meats. With the cilantro, it's fabulous. Would also be equally as good using flat leaf parsley. Mix the scampi butter with zucchini or spinach for a different taste. This recipe is excellent in my opinion.
