    this is a very good salad. if you want a more substantial meal
    mix in some cooked penne or cork screw pasta or orzo. kalamata
    olives are a nice touch also.

    Excellent - unlike another comment, I love the readers suggestions on how to tweak the ingredients. I love red onion and plan on adding that next time, also prefer artichokes NOT in marinade. Thanks for the hints!

    The first time I made this salad, I halved the recipe just so I could try it. I liked it so much, I made a double batch, plopped it all (except romaine in a zip bag and hauled it 150 miles for a gathering of friends. They loved it so much that they begged me to make it again next year. The mozzarella doesn't break down all that quickly, so it kept very well for a few days in the fridge (adding fresh romaine at each sitting.

    The only alteration I had to make was to get artichokes NOT in marinade because what was available to me had oils in it that two of the friends were allergic to (canola and sunflower. Instead, I marinated a can of brined artichokes with my favorite Italian dressing.

    I have assembled this salad again numerous times, sometimes adding arugula, black olives, cherry tomatoes, and very finely sliced baby red onions from my garden. I'm going to try it with bell peppers next because that's what's coming up in the garden.

    Just an observation, some of us read the ratings before we choose to make a recipe. How are we supposed to really judge the recipe when people either haven't made it yet, substitute most of the ingredients or correct knife cuts?

    I haven't tried this yet but I will, probably this weekend.

    For Dolphinfan, you could try using mushrooms marinated in oil and spices instead of the artichokes. It should give about the same effect in your salad.

    I made a few enhancements, and it turned out great.

    I used artichoke hearts in water instead of oil. I marinated the mozzarella cubes in olive oil with fresh basil and red pepper flakes. Then I used the marinade as the dressing, along with a squeeze of lemon juice and a pinch of salt. Made homemade croutons with fresh Italian bread, cubed, tossed with olive oil and garlic, then baked.
