    Made this last night and it was wonderful. Chicken was juicy, tender, and who doesn't like the flavor of bacon, blue cheese and butter?! (If my husband had his way, bacon would be added to every recipe...

    As I was only making two breasts, I halved the recipe. Also, I subbed chopped green onion for the chives as it is what I had on hand.

    One small warning--do NOT add extra salt. I almost salted the chicken breasts while i was peppering them out of habit--I'm glad I didn't--the bacon and blue chesse make this quite salty already. Any additional salt would have been unbearable.

    Made it tonight for dinner and the family loved it. Was super easy and flavorful. Made it with boneless chicken breast and then roasted some asparagus with it. So delicious. Hubby said we have to make it again!!

    This is just a great chicken recipe. Easy to put together, not long to cook, 'delicious' comments from everyone we've served it to. I liked the amount of blue cheese 'bite' and would definately recommend this for others to try.

    We saw Claire prepare this and it looked delicious! I love bleu cheese, but my hubby doesn't care for it all the much so I only added a few crumbles to the butter mixture and it came out awesome! He took leftovers to work and shared with his co-workers and they all think I'm an awesome cook! THANKS CLAIRE!

    This is really a very good recipe, just had a little too much Blue Cheese for myself and my DH. Next time I will try mixing the Blue Cheese with Swiss and see how that turns out, also I'll add extra chives, should be dynamite then.

    I tried this recipe exactly as written. I used unsalted butter and found the food...a little bland. A little sprinkling of salt made all the difference.

    I then tried it with some of the compound butter on top, and it left wonderful little bits of cheese and bacon on the top.

    I tried it with salmon, and then I also tried it with boneless skinless chicken breast (I cut a little pocket in the center...same with the salmon, and that was actually my favorite.

    A really useful technique for a myriad of different foods!
