I made this for my family tonight and everyone loved it. Instead of simmering the beef stock down, I just added 4 cups of stock after adding the browned beef and onions together. I also added a little thyme and a bay leaf to the broth. I kept to the recipe for the potatoes. They aren't the texture of regular mashed potatoes, but they aren't intended to be. The end result was varying textures that went together wonderfully. I'll definitely be making this again. Great recipe!

Had to add corn starch to thicken, was very tastey, both my boys loved it and they are picky and have different tastes. 24 and 21 years old.

This was delicious and fairly quick and easy. I added carrots and mushrooms and loved the little pearl onions. I was not thrilled with the potatoes - with this dish. I liked the potato bowls by themselves - but my husband and son liked the bowls. I didn't rice the potatoes - just mashed with butter and milk. I will definitely make this again.

I just finished making and it was great! I think I would skip the separate pot for reducing the stock next time, and just add it after the meat and onions are caramelized when using a "stew" meat like Chuck to get the tenderness...just to keep it down to one pot.
I will also just spray the cookie sheet and potatoes w/olive oil spray to make life a bit easier. I really enjoyed this recipe. I think Claire and I have are "taste buds" so far! I love crispy potato skins and I did add butter and 1/2-1/2 to the remaining guts. I also used some of my homemade greek yogurt on the side.
YUM!
People need to get over the "5 ingredient" counting.

I MADE THIS RECIPE FOR MY FAMILY AND WE LOVED IT., I MERINATED MY BEEF OVERNIGHT WITH THE SPICES AND PUT INTO A ZIP LOCK BAG...I USED
YELLOW ONION INSTEAD OF PEARL AND I ALSO MASHED THE POTATOES WITH SHARP CHEDDAR AND SOUR CREAM BEFORE PUTTING ON TOP OF THE BEEF. I SIMMERED THE BEEF OF ABOUT AN HOUR LONGER IN THE JUICES TO LET IT BECOME MORE TENDER.. I WILL DEFINITELY MAKE THIS RECIPE AGAIN.
I THINK NEXT TIME, I WILL LIGHTLY FLOUR MY BEEF BEFORE I SAUTE TO GIVE IT A LITTLE MORE TEXTURE.

This is easy and my family loved it. btw.....it has five ingredients. water, salt & pepper do not count.
