I have made this recipe 3-4 times and have made a few changes along the way. I only used two large chicken leg quarters for my meal and added one large onion, sliced. I also added the same amount of fennel for my two leg quarters. I also added thyme with the meal. I tried this meal without the beer and that was also very good. I say change it up every now and then. I also tried using one diced jalapeno to the gravy which brought a whole new flavor to this meal. I love it all ways and thanks Claire for the easy recipe.

Pretty good, but I expected a bit more, worth trying again to master the technique. My chicken was a little dry. Will try the crockpot next time but the sauce was outstanding!! Reduce, reduce, reduce the sauce.

This looks so good.I've used beer in cheese soup and also in the crock pot for slow cooked ribs.I later add bbq sauce to the beer as it cooks.

Wowser! My picky teenaged daughters even loved this. I've heard of fennel, but I've never cooked with it before. How all this came together and tasted so good, it's like a time warp in the oven, I guess! Good stuff! I used Honey Brown beer.

I can't put five ingrediants in anything, so I added some shallots and thyme in with the fennel. This is the type of braised flavors I love in the Fall.The chicken was a tasty however I had to change to a larger pan to fit (maybe my extra shallots?!?!

I thought it was great and very simple to make. I made it with regular bacon and not apple wood smoked. It was still very good. The next day I shredded the chicken to stretch the meal out a bit more. I would make it again. I never used fennel, beer, or apple cider to cook with. This was all new to me but all very good.

After reading several other reviews I made a couple of slight modifications when I cooked this last night. I added a sliced onion to the fennel and poured the sauce through a fat separator before reducing it. I recommend doing both...the onion adds great flavor & the sauce would have been very greasy without removing most of the fat. I served this with mashed potatoes & the rest of the 6-pack I bought to make the recipe. Definitely a cool weather keeper.

I've tried several of Claire's recipes and truly loved them all. This one did not impress me as much. The combination of beer and fennel held promise, but the recipe calls for too little fennel, in my opinion. The flavor of the fennel just doesn't come through with only one bulb. I plan to try this dish again and use two fennel bulbs. The blue cheese mashed potatoes recipe that Claire prepared to accompany the chicken is outstanding!
