On the program I noticed that Claire did not tell you to begin braising with the chicken breast side down and then flip after 20 minutes. This was only mentioned if you read the recipe. I was also surprised that after browning the chicken in bacon drippings (there is also additional fat accumulated from the chicken skin none of this was skimmed off prior to adding the beer making the sauce cloying with grease. As someone else noted, an additional fennel bulb should be added as the flavor did not really come through for me. I think there are more flavorful, less heavy braising recipes than this. I will not repeat as written.

this recipe has great flavor. I would use two fennel bulbs next time, as there wasn't enough. I omitted the bacon, since we're all on diets, but I think bacon would make it even tastier. I will make this again, since it was so easy and flavorful. I served with steamed broccoli and mashed potatoes.

DELICIOUS! This was a huge hit! The flavor was amazing. I will make this one again for sure. I also made the potatoes in this episode and they were out of this world.

I always wanted to try fennel but I was not sure how to use it and in which dish. This recipe was easy to put together and I found out that I loved fennel. I want to try it again and put my twist on it.

This Chicken was moist, succulent and delicious. The sauce was so good that we ate every drop. I will note that in my region of California the fennel bulbs are much smaller than she showed on TV, so I used two fennel bulbs. Also, I can highly recommend, Newcastle Brown Ale - it made a wonderful sauce. I did mount the sauce with 1 tablespoon of butter after reducing it, which, of course made it even more delicious. My mother, who never likes sauce, went back for seconds of this sauce. If you've never tried fennel, this would be a great way to start.

I made this tonight and it was a huge hit. I had to substitute onion for the fennel, but I added some fennel seed and got some of the flavor from that. Really easy and really good!

I watched Claire make this last week and tonight I tried it for myself. What a wonderful recipe. It was so delicious and looked exactly like what she made on her show. I also made the twice baked rosemary blue potato mash that she made to go with it. This is a great paring.
When I decided to log on and rate this dish, I had a hard time finding it. I typed in the exact name that had been printed out on my copy of the recipe but the search did not bring it up. I had to go back to the day she had the recipe on her show to find it.
This recipe is a keeper!!!!!

My visiting realtor asked what smelled so good when she walked in the house and when she tasted it, she had to have the recipe. My husband said it's the best dish I have made in our 4 years of marriage, and I cook a lot of yummy dishes for him.
I didn't have a dutch oven but I seared it in a pan and used a crock pot instead.

I made this last night for my husband, 2 teens and myself. Instead of a whole chicken, I used 3 bone in breasts and 2 bone in thighs, and boy, was my pot crowded. Could not have gotten another piece in there. The meat took longer to sear than I expected and made a HUGE mess on my stovetop. Was a little nervous about using the fennel - have used fennel in the past but I love it (and love licorice but no one in my family loves licorice...so I kept the fennel a secret until after everyone was finished eating! They would have never known, because while you can taste it, the flavor isn't overwhelming. Teen son loved it, I loved it, husband loved it...teen daughter, not so much...but she can be a bit picky. Served with the potatoes from the same show, but used cheddar instead of blue cheese, as no one in my family but me likes blue cheese. By the way, the potatoes mixed in with the chicken juice...surreal. First recipe I've ever made of Claire's and it definitely won't be the last. She hit it out of the park.
