After making the entire Steak House menu from Claire Robinson, I wanted to star in an episode of the "Best thing I ever ate!" This was a fabulous dinner, and totally easy and not all that expensive. I did cut the bleu cheese butter recipe in half since I was only making two filets. I used smoked bleu cheese and it was incredible. I discovered a really good combination by accident too. I had toasted some sliced crustini to serve with dinner. I took the toasted crustini, topped it with the creamed spinach and one of the roasted tomatoes then drizzled it with white truffle oil. OMG!! Major mouth orgasm! Seriously. the sweetness of the roasted tomato, the creaminess of the spinach, the crunch of the crustini all topped with that sexy, rich truffle oil. Well, all I can say is this is the meal I have always dreamed of. And Claire, seriously, that filet with the compound butter....WOW!

This came together soo fast! I made some garlic mashed with it and a salad for our Anniversary dinner and it was great! Had time to pull it together on a Friday night after working all week too. A fast, fancy meal for way cheaper than it would've cost us to go out for steaks, thanks Claire!

I don't know what Marsha's problem is....she doesn't like Claire for some reason. And, no, I am not related to the chef in any way. I tried all the recipes from this
episode and they were fantastic!! Last Sunday I made Claires Sundsay's beef roast with Yorkshire pudding, and it was a hit also, my family loved it. I like Claire and I hope she comes up with more shows...she is pleasant and easy to watch. Marsha don't be so critical!

I chose this recipe for my first attempt to make filet mignon and it turned out incredible! The compound butter added some much moisture and flavor to the steak it cooked so tender you could cut it with a fork!

I used gorgonzola cheese because I like the taste better, and I didn't salt the steaks themselves (following the directions because I thought the butter would already be too salty, but next time I think I will add a little extra salt directly on the steaks. The steaks I used were about 8.5 oz each so I seared them 3 min per side and cooked 9 min in the oven - they turned out perfect medium rare. Really great recipe, I am no longer afraid to cook good steak!

I'm over 50 and NEVER attempted (for some reason a filet of beef. When I saw this I thought...ever if it is overcookded and not pink it will at least be tender and I could say I attempted it. OMG! Ruth Chris here I come! YUM! EASY.
I got my meat from Trader Joe's and it was already precut. I needed every moment of the 8 minutes she suggests in the video..on having it in the oven.
And if you like blue cheese......... I used crumbled gorgonzolla and 1 sitck of butter. It was only for 2 people. I can now freeze the remaining 1/2 and plan on doing the same meal 3 weeks from now! What a great recipe!

Thank you so much for sharing this with your viewers. It was simple and tasty. I may try regular bleu cheese next time. I made it with Stilton and it was different. It was simple and a great way to change things up a bit- thank you again!!

My husband and I have made this recipe before when we first saw the episode and loved it. Instead of heating the oven up since its hot out I thought we would try it on the grill and it was fantastic!! The only difference was, I did not sear it in a pan first and I added the compound butter to the steaks as it was resting under some tin foil ( I think I will skip this step if doing on the grill again as the butter didn't melt very well and I ended up scraping it off Overall we love it and thank you Claire for an awesome & easy recipe.
