    I Love, Love, Love this recipe!!! I made it with local honey and Walnuts. I had to add Baking Soda and Baking Powder and salt to my non self rising flour. They baked up nicely -- They are healthy and low fat and wonderful.

    Okay, simply wonderful. I added 1 tsp of Rumford Aluminum Free Baking Powder - 55 mg sodium plus a 1/2 tsp of baking soda to the flour to simulate self-rising flour and a 1/2 tsp cinnamon. Everything else just like the recipe, using agave syrup. These were light, fluffy, perfectly baked in 25 minutes. Just ate my second one...yum.

    Knew I would try this recipe as soon as I saw Claire do it on air: far too many bananas get thrown away at our house. What an easy basic recipe! I added lightly toasted walnuts and cinnamon. My first batch came out a little too dense, although delicious, so I am going to reduce the flour by 1/4 cup for the second batch. Will probably be making this weekly: it's just so simple that there's no excuse for wasted bananas!

    I made these with frozen bananas and made them with vegan adaptations (we have food allergies in the house. I used an egg replacer for the egg and instead of butter, I used vegan margarine. The margarine did not get brown (as I expected, but the muffins were still delicious! I added a little extra mashed banana and some water to the batter as the batter seemed very thick. The muffins were soft, moist, and fluffy with a light sweetness. Outstanding! Thanks for the "starter" recipe!

    This was a super simple recipe. I didn't have self rising flour either but I added baking soda and salt and it did the trick. I also didn't have Agave syrup so instead I added one part honey to the bananas and brown sugar to the butter. Before I put them in the oven, I added brown sugar to the top of the muffins and they came out great. They were a little dense so I will try using less flour the next time I use this recipe.

    This receipe was so easy.They taste great. I added some cinnamon and walnuts. Then on top I sprinkled with walnuts and added a litte extra Agave...Yum

    Super easy to make; helped us get rid of our ripe bananas and meet our healthier snacking plan. These are a bit dense but very moist and the banana flavor is there. I might try adding a little vanilla next time for a bit more "pop".
