These muffins are awesome! SO good! I accidently used 3/4 cup of flour instead of 1 and 3/4 cups of flour and they were amazing! Its like eating a bananas fosters desert. The next time I made them I did the correct measurement and I thought they were horrible! Trust me....try them with 3/4 cup of flour only. You will love them.

Couldn't be easier. I have many frozen ripe bananas in freezer; I defrosted 4 in microwave. I put them into a blender with the agave, egg, and butter and liquified them. Then I blended the flour with it, done. Gladly, they weren't overly sweet. Next time I will add chopped nuts. I didn't have self-rising flour, so I added some salt and baking powder. I baked these w/o liners in a non-stick muffin pan and they released easily.

Absolutely Amazing. Erin in Santa Clara-- as we say in the south--- "Bless your heart". I've made these so many times-- in fact-- I have a loaf in the oven now-- trying the same recipe- except using apples and cranberries! (very fall : Claire you're awesome-- keep it up!

This was such a simple, easy way to use up my banana. They turned out perfect and my family loved them, plus it made my house smell yummy. Love this one and will do it more often.

These muffins didnt work at all for me...I followed the directions exactly but they came out dense and disgusting, also, did not cook all the way through. Tasted very floury. I would suggest dicing some bananas to add after mashing them, otherwise its just mush.
