  • 8 ounces cream cheese
  • 1/2 cup finely chopped celery
  • 1/2 cup hot sauce (recommended: Frank's)
  • 1 rotisserie chicken, shredded
  • 1 cup crumbled blue cheese
  • Crackers, bread or carrot sticks, for serving

Preheat the oven to 425 degrees F.

In a medium saucepan over moderate heat, melt the cream cheese until smooth, about 3 minutes. Add the celery, hot sauce and chicken and mix well. Transfer the mixture to a 9-inch pie plate and sprinkle the crumbled blue cheese on top. Bake until hot and bubbly, about 25 minutes. Serve with crackers, bread or carrot sticks.

What Makes This Recipe Really Sing: This has all the great flavors of Buffalo chicken wings without all the fat of the chicken skin and oil. Want to make it lighter? Feel free to use light cream cheese.

NEW FAVORITE! Made 2 today for a SuperBowl party. Made 1 wi 1/2 the hot sauce and the other wi 2xs the hot sauce. Used 2 whole store Rotisserie chickens, diced not shreded, and it was just enough. But they were so small, I could have sworn they were quail. Great recipe! Made this for friends on NYE and everyone loved it. I took some advice from the comments and modified the recipes. I used 2 boxes of cream cheese, 2/3 cup franks, and panko to top the dish. It turned out to be very creamy, not dry whatsoever, and the blue cheese wasn't over powering. DELICIOUS!! My only complaint is that 1 cup blue cheese was way too much for my liking - and I consider myself a blue cheese fan. This is a great recipe however I have a couple of suggestions. Substitute chunky blue cheese dressing for some of the crumbles and it won't be dry at all. And if you want to make it healthy, next year use some of your left over turkey from thanksgiving instead of chicken. It tastes just as great with less calories. I did get better responses with using both Ken's 1/2c blue cheese & 1/2c ranch salad dressings instead of the crumbled blue cheese. I was so excited to try this recipe for a family cook off during the Christmas holiday. Unfortunately, it didn't turn out the way I expected. I doubled the recipe and used two rotisserie chickens,plus all other ingredients were doubled, except the hot sauce because I didn't want it to be too spicey for children who was in attendance. It turned out dry, and it was too much chicken and not enough flavor. It was eaten and the family stated that it was good but dry. I will make it again for the superbowl game and this time I will use less chicken, and add some sour creme to add moisture so it won't get even dryer during the baking process. For those, like me, who don't like blue cheese, just pour some good ranch dressing over the top.....the thicker jarred style works best........it's what we do here in BUFFALO New York......home of the Chicken Wing! Ok! I had cooked shrimp,immitation lobster and water chesnuts. I really wanted to make this so I did sans chicken. OMG!!!!!!!!!!!! So delicious. I chopped up all the pre cooked fish and having no hot sauce I used Wallmarts Fresh coctail sauce (ROSAS foud in the seafood section. It is so HOT so use to taste. Well I used it for small party and GONE in ten minutes. I served with bagel thins and celery. I know it is different from the recipe but it is what inspired me to use what I had on hand. I read all of the reviews before I made this dish. When I saw Claire prepare it on the food network channel, I fell in love with this dish. I finally got all the ingredients together and made it. I fixed it exactly like she wanted it. I think it should have less baking time, a little more hot sauce. It came out good, but not tasty, it was dry. Delicious! Such a crowd pleaser! Instead of blue cheese, I top it off with any cheese I have handy- muenster is always good and browns well if you broil it for the last few minutes of cooking. I usually use another cream cheese and make a little bit more dip. I put some in another baking dish and freeze it for a last minute party dip. Just thaw and put it in the oven! I made this dip for a Mother's Day family barbeque & it was a HIT! I did, however, stretch this recipe into 2 dips...I used 2 packages of reduced fat cream cheese with 3/4 cup of the hot sauce & melted as directed. But I used just 1 rotisserie chicken & about 1/4 cup of the blue cheese crumbles on each dip. Baked as directed. It was plenty & everyone thought it was great! This dip was a MAJOR hit with my co-workers!!! WOW! All the taste of chicken wings without all of the skin and grease! I'm really not a fan of wings anyway, but they always smell SO good. This dip couldn't be any easier and it is delicious. Great idea to combine the cream cheese and hot sauce on the stove....putting the cream cheese in the microwave wouldn't be the same. I did use lower fat cream cheese and it turned out perfect.
