    What a super easy & delicious recipe. Nothing better on a cool / cold night than a warm bowl of soup & this definitely hits the spot.

    This was so delicious. My husband who doesn't like squash loved it. I did add a touch of nutmeg, but other than that followed the recipe.

    This soup was absolutely the bomb! The curry was the ingredient that sent this soup over the top for me. Found it very easy to make. Very satisfying on a chilly fall or winter evening.

    Coming from a guy who HATES squash ... I LOVED THIS! ok - so I had to make changes simply do to supply issues. BUT, it turned out yummy!! So here's how I did it:
    Stilled oven-roasted the squash, except I had 2 lbs of pre-cubed squash. I didn't have shallots, so I used a half of onion cooked in 2 tbsp of butter, then added "almost" 2 cans of chicken broth. Given I didn't have stock, and didn't have the 3 lbs of squash, I improvised. I didn't have curry either - HAHA!! So I used a couple tsp of creole seasoning - perfect heat!! So --- after totally butchering this recipe, I couldn't make this soup without it! The soup I made was delicious!! After serving, a light sprinkle of nutmeg ... there ya go!!! Great soup!!! I hope this helps someone! Good luck!

    This was my first encounter with squash. I made it for New Years day dinner. Big hit! I did add nutmeg, and some cinn. it added a nice warmth to it. Also I thought it was a pain in the butt to scoup out the squash from the shell, so today I just peeled and chopped it. Much easier!

    Delicious! I pureed the squash and cold chicken stock before cooking so it was easier to handle. Made it ahead of time to reheat for a party--it was a big hit and so easy!

    Just delicious! Love that you roast the squash with the skin on. Way too much work to peel and cube like some other squash recipes.
