    Great soup...I have made it 4 times, and have changed mine a bit. I add a couple of crushed garlic cloves with the shallots, add a bit of cumin and some finely chopped cilantro near the end of the cooking. Both ways make delicious soups.

    Easy recipe - yes, it's a bit time-consuming, but well worth it. Roasting the squash is not only easier than peeling and chopping, but it makes for a more flavorful soup. I thought the amount of curry was fine...any less and the soup would be bland. Tonight I sprinkled a few roasted pepitas (pumpkin seeds on top. I've also sprinkled homemade croutons. Definitely a recipe I will make again and again.

    Excellent! I also added half a cup of red wine in place of half a cup of chicken stock, and I thought that it went well with the dish.

    This is a wonderful recipe! I made it with the same ingredients listed, but with a little less curry and a 2 1/2 pound squash. I cooked it on a cold, rainy day so I think it was extra good! I will have to say that the whole process is quite time consuming, but well worth the effort. Not difficult to make . . fantastic taste!

    What a brilliant way to prepare butternut squash soup! So much easier as compared to most recipes that suggest you peel and cut the squash prior to roasting. I substituted nutmeg and cinnamon for the curry powder and used Anne Burrel's cinnamon cream recipe and it was excellent!

    Do NOT use more than .25 tsp of the curry unless you absolutley adore curry. It is overwhelming. SUper easy to make and great flavor all on its own.

    This recipe is incredibly rich and flavorful. Plus, it doesn't get any easier to make homemade butternut squash soup than this. I love that it doesn't include heavy cream as an ingredient. I topped each bowl croutons to add a bit of crunch.
