    Very good! I put some of the marinade under the skin also. Turned out delicious!! Took longer to cook than the recipe stated, but I find most of the recipes do though.

    This marinade was really good, but I deboned the chicken breast an grilled it. It was yummy. I'll definately use it again.

    Loved it!!! I can't wait to try this marinade on a whole chicken and either roast it or cook it on the grill beer-can chicken style. And for those who forgot to line their cookie sheets with foil, use oven cleaner (the kind that works in a cool oven. It cleans those cookie sheets right up with very little effort.

    I think I'm going to take some of the leftovers and top the chicken with a roasted green chili and bit of cheese...

    For those that don't have lime, I've always used Calimansi, a filipino citrus. It's like a lemon and a lime, and small, but very good and juicy.

    I also use sea salt instead of table/kosher salt, and right before putting it in the over, I put some paprika on it.

    I forgot to add, that I used a small baby chicken and used the same amount of ingredients and it turned out fine.

    I think for something like this, you can eyeball it.

    Quite good. Moist on the inside and crispy bits on the outside. Easy to make. I served mine with black beans and rice and a fresh homemade salsa. I wish I'd read others comments about the pan. Mine is soaking and I am hoping it will come clean. I'd recommend lining with foil.

    I put more salt and pepper on the chicken. It's juicy and tender but lacking in flavor--I feel like it needs something else. I will be trying the schoolhouse wraps with it today and will see how that one goes.

    I thought this dish was ok, not great and not bad. It certainly could not have been easier. I made it with boneless/skinless chicken and it just seemed to lack a little something. My husband agreed that it was ok. The flavor was only on the outside of the chicken and when you cut into it all you tasted was chicken not the seasonings. I did take note of one of the comments that said the drippings ruined their cooking sheet. Therefore, I lined mine with aluminum foil and it was fine and also made the clean-up much easier. Hope this review helps others.
