    Warning! This IS a diet buster! But...it is worth running a few extra miles so you can indulge in something satisfying and delicious. Do get the spinach fettuccine or linguine if fettuccine is not available in your area. My husband took this up a level and made his own spinach fettuccine. Pour a nice, chilled white wine, play your favorite music and you have an easy romantic meal for any day of the week! Thanks, Claire!

    I'm not a fan of pepper but Claire was right! Next time I'll know to trust her. Can't wait to try it again YET I know I will still hold back to @ 1 1/2 tsps. Thanks Claire!

    Great recipe. Make sure you have a nice big pan to combine it all! I made it twice; once with fettucini and once with penne. I preferred the penne because it was easier to stir it all together. I used thick cut bacon instead of slab. If you use the thick cut bacon, I recommend freezing it before you cut it up. Some people omitted the baby spinach in their reviews but I thought it added some crunch and freshness. I also found it took longer than ten minutes for the bacon to cook, but I'm not sure if that was because of the thick cut bacon substitution.

    I tried this for the wife after seeing the show for the first time. I sauted some fresh garlic in with the bacon served with some garlic toast and a nice light white wine. What a great dish. Keeps you moving in the kitchen but well worth the effort.

    This was delicious. I love carbonara and have never made it before. This was simple and exactly the flavor I love. I would prefer pancetta to bacon, but used what I had on hand. Didn't have spinach fettucine either so used mini Rotelle wheels and added peas. The kids loved it!
