Nowhere on the tv show or the recipe does it say to use cream. People, lay off the sauce!
This was a nice, simple recipe. Like the addition of of spinach. Makes a good one-dish meal. Thanks, Claire!

The recipe does not call for cream..... It states that if you follow the recipe properly, the result will HAVE a creamy consistency.
I made it tonight and it was very tasty. One of the better recipes for Carbonara. I like her style and her approach. On this particular show she made adult mudslides and didn't hide the fact that she was working on her second glass. She said "and now we're having lots of fun in the kitchen", it reminded me about the Julia Child jokes about "cooking with wine".
She is very entertaining....Keep up the good work Claire.....

I can't find slab bacon anywhere! The butcher at the whole foods market said I could sub salt pork, and I bought it, but I am afraid it won't come out right. Should I just use regular thick cut bacon?

I made this recipe when I was scrambling for something to do with leftover bacon from breakfast. I used leftover sliced bacon (saved drippings too and the green bottle of parm cheese (all I had on hand and spinach tortellini mixed with rotini (again all I had on hand and it came out wonderfully! Great recipe!

I always make a point to watch Claire's Show since I have very little extra time to mix a lot of ingredients. I always enjoy her receipts and this was no exception. My husband doesn't like cooked spinach but said this was excellent even with the spinach. Keep up the great cooking.

I also watched the show and waited a day to make it. My husband said I could have left out the spinach (figures, I think the only change I will make the next time I make it is to chop the spinach some....other than that it was very good!!! Thanks Claire!

I watched the show and there was no cream. Like others have said, it was a typo. Claire said on the show, "eggs and cheese for the sauce, that's it." After seeing the show I decided to try this recipe; it was great like everything else I've tried that Claire has made. Adding the pasta water to the egg & cheese mixture really made it creamy. In fact, it made it very rich and filling so I have a lot left over. Claire, thanks for the great recipe. Keep up the good work!

I used about 1/2 cup if cream and it was excellent. This is my first shot at making carbonara and I loved it.

This was my first time making a carbonara sauce. I was a little worried about scrambling the eggs. But this worked perfectly. I only made two changes: I used plain dried fetticuine and sauteed some garlic in the bacon fat for just a minute before I added the pasta to the sauce. This was AMAZING. The spinach is a nice addition to a traditional carbonara sauce.
And, I also watched the show and no cream was used. This must be a typo. Just whisk the eggs together with the parm, pepper and then slowly whisk in the pasta water.
