    Claire's Sortbread cookie Recipe is the bomb !!!! You do such a great job with all your recipes Claire like noone else on the network. I just can't seem to find the Rosemary Parmesan shortbread cookies which is one of my favorites listed in the shortbread recipe . I am going to try the earl gray recipe instead. People can't stop eating them including myself. They are barely out of the oven and the hands are all over the cookies. I always have to make double.

    I have been looking for a good shortbread cookie recipe forever. This one is great, easy and versatile. I added extra sugar to leave the cookies plain. Also I baked one batch at 325 degrees for 18-20 minutes for a less brown version which also adds versatility for decoration and appearance. Excellent!. Thank you Claire. You rock, lady!

    Bad recipe but great results if you overlook the issue of the 2-1/2" by 5" log being sliced every 1/3" and producing 65 cookies. I got about two dozen cookies out of this, after I just gave up on trying to figure out what those measurements were all about.

    My fifth ingredient was Chambord instead of water. Then, before baking, I sprinkled a small amount of applewood-smoked sea salt on each cookie.

    The results are fantastic. Sweet, but with a hint of smoky saltiness.

    Great recipe! Also good for my granddaughter who has egg, nut and peanut allergies. Nice to have a cookie we can make cutout cookies out of so she does not feel left out of the whole Christmas cookie fun, she is only 4 & it is important to her, & me!

    Well, I just placed the log in the fridge, but it's certainly longer than the 5" that is indicated in the recipe. I can't figure out how you would get 65 cookies out of the 5" log. That would be 13 cookies per inch...........impossible! And 1/3" cooking with a 5" log would only produce 15 cookies, not 65. Maybe you're supposed to make multiple logs????
    I gave it 5 *'s since it was so simple to make and I'm sure they are delicious.

    This cookie is an accurate representation of the classic cookie I grew up with, but I agree with a previous poster about the quantity. I got 28 cookies total out of my batch.

    I have tried other shortbread recipes and they do not come close to this!!! When the recipe is done correctly. You have an AMAZING cookie that everyone cannot stop eating. I did the shortbread recipe part only. After they were baked off I dipped some of them in chocolate. Everybody LOVES them and I'm sure you will too!

    I made the Chai version of this shortbread cookie using the contents of six Stash Double Spice Chai tea bags and they were a hit. It did take an extra half teaspoon of water to get this to a crumbly dough consistency and only made about 40 cookies (not 64 but were simple and quick to make. The first batch didn't make it through the evening so I'm on my way to the kitchen to make a second batch.

    Made these today with pecans. They were a great flavor and will make again, but there's no way they make 65 cookies (and I made mine small. It's a good, basic shortbread recipe.
