Blech. No flavor! 2# fresh spinach-sauteed' w/ garlic, salt & pepper. Drain liquid. Mix room temp 1/2 c lite sour cream, 1/2 c neufchatel cream cheese, 1 T horseradish, 1/4 tsp nutmeg. Mix into sauteed spinach. Delish.

I've never liked creamed spinach and we all loved this. So simple. I didn't buy enough spinach and that was my only regret. Even our teenager ate it. Yum!

I'm amazed how easy and yummy this was! I can't believe I didn't think of this myself. I used frozen spinach run under hot tap water instead of fresh and it turned out sooo good! It was nice to find such a simple recipe that tasted so good.

I have made this several times. I have even used evaparated milk in place of the cream because I didn't have cream on hand. Also what I did to help drain the excess liquid off the spinach was place a small saucer and weighted it down with a 14 ounce can of veggies while it was in the strainer. And Marsha as for your chef's comment, sometimes I don't want to fix their recipes because sometimes the recipes call for things that I can't get where I live, take to long or have a long list of ingredients. By the way, there are several chef's that have recipes out there for creamed spinach, have you insulted them?

First time I did this, I did it exactly like Claire did on TV and as the recipe reads. It came out 5-stars and all liked it. Last night was the 2nd time to do it. I had to change a few things. My store didn't have good looking fresh spinach so I opted to use frozen. There were only 2 of us so I also didn't need 2 lbs. I used 2 10 oz boxes so I scaled back a little on the cream. Also, I added about a TSP of butter to the cream and melted/mixed it in just before adding the spinach. Again, it came out 5-stars.
Also made the roasted tomatoes which were wonderful. Rest of the meal was tarragon smashed potatoes and grilled KC strip steaks that were bursting with fantastic flavor.
Claire, your show is great. I really hate to ever miss it. Don't change it because of a few "rancho lunacy" comments.

NO, I AM NOT HER AUNT - THAT WAS JUST A NOD TO YOU KNOW WHO.
LOVED THE SIMPLICITY AND IF YOU USE FROZEN SPINACH ( ACTUALLY A LOT CHEAPER ...AND WHO KNOWS? FRESHER THAN THE FRESH SPINACH, MAKE SURE YOU REALLY SQUEEZE THE WATER ...REALLY SQUEEZE!
EXCESS WATER, EVEN FROM THE FRESH SPINACH WILL MAKE THE CREAM SOUPY.
ADD WHAT YOU WILL TO SATISFY YOUR PARTICULAR TASTE OR JUST ENJOY THE PURE SIMPLICITY OF THE DISH.
I LIKE CLAIRE AND APPRECIATE THAT SHE STAYS EXACTLY WITHIN THE PERIMETERS OF THE "FIVE INGREDIENT OR LESS FIX".
