I tried this recipe because it was simple. However, it was a little boring. I will be going back to my old cream of broccoli soup. It has a more complex flavor.

I cut back on the cheese and only added 8 oz! Actually it tasted great even with out the cheese. Also, substituted one medium yellow onion for the shallots. What a treat! Thanks so much for a nice tasteful, healthy compliment to a meal!

Asparagus is in season, and one of my favorites...has anyone tried this recipe with that? Just wondering if it would be a 1 to 1 swap of veg and still come out good.

This was the easiest soup to make, and the BEST broccoli soup I ever had. My kids even loved it. I used 1/2 the amount of cheese and it was perfect. Next time I may even use less = or just use it as a dollop to top it with. I liked a previous reviewers suggestion to use the tofu. Might try that.

Tried this soup 4 nights ago and the whole family, including a 7 and 9 yr old, loved it. The only problem was that the 8oz container of marscapone that I used had more than 90 grams of fat! The next day at Trader Joe's right next to marscapone was Tofutti - a tofu cream cheese with less than half the fat. Made it tonite with Tofutti and no one could tell the difference. Same taste,texture and creaminess with less than half the fat. Good deal. Great recipe.

OOH this soup was delish! I could NOT stop eating it! I followed instructions except I used a hand blender in the pot (so much easier and less cleanup! Also, I like things super spicy so I added crushed red pepper flakes and some squeezes of sriracha sauce. I usually use fresh garlic but since the recipe didn't call for it, I added some garlic powder in the end. Yummm!

We've been looking for whole ingredients and good-for-you food at my house and this one seemed so simple. Boy, are we glad we tried it, even the kids loved it! Who doesn't like broccoli and cheese? I can understand the differences in regional tastes buds having grown up in St. Louis but living in south Texas for awhile. So to the reviewer from Greenville, TX: Just add your favorite hotsauce to spice this up a bit. Now that we live just south of Wisconsin, I can make it mellow for my northern friends and keep the hotsauce handy for my spice - loving husband. What a versatile soup. Thank you, Claire - we love five ingredients or less!!

I don't know what the other reviewer did wrong, but this recipe was AWESOME! I never measure ingredients or follow a recipe to the letter, but I usually look at the reviews before I make anything I find on your website. However, this time, when I checked this recipe, there was NOT ONE review. After seeing Claire make this on TV, and seeing what actually went into it; I decided to try it anyway. I am so glad I tried it!! It was SO SIMPLE, and very tasty! I made a little less than the recipe calls for, so I 'eyeballed' most of the ingredients. EVERYONE at the table loved this! I will definitely be making this again and again. Thanks Claire!

Saw this recipe yesterday and decided to try since I had broccoli and mascarpone cheese that needed to be used. I like it alright, but the hubby took a taste and said he didn't want it. Don't think I will make again.
