Glad I found this recipe, much simpler than the one I was actually searching for. I used this for the crispy goat cheese technique. I'm still acquiring a taste for rosemary but liked the idea of the flavored oil. I infused my own olive oil so the rosemary taste was likely a lot lighter than I'd get out of a bottle. I topped greens with the delicious (and nicely crisped! cheese, roasted beets, red onion and toasted walnuts using the leftover rosemary oil to make a balsamic vinagrette. Yum!

So delicious along side the Steak with Cherry Shallot sauce recipe. We actually ended up making a steak salad of sorts using the Cherry Shallot sauce as a dressing for the salad and slicing the steak and ate the whole thing as one dish. So easy and yet a real show-stopper.

This recipe is fantastic. You can tweak the bread crumbs any way you would like......I have
put fresh chives in them and used garlic infused olive oil.......and to the person who criticized
the rosemary infused olive oil, you can purchase these flavored oils at high end grocery stores like Bristol Farms, and Pavillions.........Trader Joe's has them as well.............give me a break!
Buy the oil and use it for other things, but for this salad, it is amazing........I sliced crisp pears
into the salad, sliced red onion and toasted pecans and then added the goat cheese with a light vinaigrette dressing......amazing!!! I make it all different ways, and every time, I get
    rave reviews...............try it!!!

Not sure how anyone could say this salad was not what they expected. It's five ingredients, all easy-identifiable flavors. It's easy and yummy. And then to rate it one star not because of taste, but because of rosemary olive oil.. good grief. Some of you should get your own food show.

I make this all the time. In 15 minutes you have a gourmet salad that impresses a crowd or just have an awesome dinner for yourself. It is creamy, crunchy, and tangy. SO GOOD!

Delicious! Rosemary infused oil goes a long way for flavor! Oh, and why do people insist on rating a recipe without having tried? SO stupid. This is not a question board. Google your silly questions! Annoying and throws off the overall rating.

Great recipe for anyone that loves goat cheese! You don't need salad dressing, the goat cheese infused with oil/breadcrumbs gives it enough flavor.
