    A light, refreshing salad that's a good basic to have on hand. I didn't have an herb-infused oil and just used regular olive oil. Liked the ice water tip for the onions.

    I made this for my fiance who loves tomatoes and red onions and he loved it! I tweaked it a bit and got a little creative. I added a couple dashes of red wine vinegar and dried oregano. I didn't have basil-olive oil so just used olive oil and some chopped parsley (didn't have basil on hand but it still came out delicious.

    We made this along with the lamb burgers and the salad was a fantastic addition to the meal. It was nice and light, and full of flavor. I didn't have the basil-infused olive oil, so I added dried basil. I agree with others, this would make a great light summer salad for lunch or dinner one evening, just add some feta or goat cheese and it would be perfect.

    I adored this recipe. I will continue to use it when I have fresh cucumbers. Since I grow my own basil it was a welcome addition to this dish, I also added avocado that I had in the fridge. Thanks Claire keep up the good work! :D

    Great flavor, didn't have the basil oil, so I added about 1 teas. fresh chopped basil. Great with the burgers!

    Absolutely delicious...wonderful on a hot summer day. I diced everything very small early in the AM and made the dressing too. I used parsly instead of basil and I added leftover roasted chicken in a tiny dice. At lunchtime I added the dressing and mixed well for a delicious meal and so easy, too. I love almost everything Claire cooks on foodnetwork!!!

    Very Tasty! Loved it, didn't use basil infused, used a Greek Vinagarette dressing, and was just as tasty. The whole onions in the ice was definitely a great tip.
